Bak Kut Teh @ Shi Wah in Permas Jaya, Johor Bahru



Shi Wah is an established old name in bak kut teh in Permas Jaya. The large corner shop located near Jusco Permas Jaya was nearly filled and there was a constant stream of customers even though lunch hour had already passed when I was there.

The clientele consists mainly of workers from offices and workshops around Permas Jaya.


Shi Wah offers bak kut teh in the Teochew style with different cuts of meat and ribs. I opted for meat with soft cartilage. The serving is straightfoward - pork and soup without frills like button and shitake mushrooms. The meat is firm and very fresh. The flavour is slightly herbal and naturally sweet.


The soup is light, herbal and sweet - it is not oily, salty nor peppery.


The long grain, good quality rice went very well with the bak kut teh.

Shi Wah's self blended dark soy sauce is also worth mentioning - it is mildy salty and slightly sweet. This sauce really lifts the tastiness of the already tasty meat to yet another level.

Johor Bahru has innumerable bak kut teh shops and a small handful are local champions. Shi Wah is among the elite group of champions.
