Business Closed - Fourstorey Kway Teow Kia 四楼小吃 in Taman Ungku Tun Aminah in Johor Bahru

Kway teow kia stalls are in every corner of Johor Bahru. Most are the mildly herbal Teochew style and there are a few stalls selling the more robustly flavoured Hokkien style. This was the first time I tried what the stall owner Mr. Chan called the Cantonese style.

Fourstorey Kway Teow Kia is family run, by Mr. Chan, his wife, and Mun, the son. The Chans previously ran the famous curry pork ribs and chicken/pork chop stall in Taman Bukit Indah before reopening here in Taman Ungku Tun Aminah about two months ago. The Chans still sell their famous chicken/pork chops here but the popular curry pork ribs are available only on weekends.

We had a couple of mixed plates of kway teow kia with a bit of everything from braised pork, innards, skin, to chicken feet.

The pig skin, like everything at Fourstorey was very well trimmed and cleaned. There was neither excess fat nor unwanted odours, just the lovely savoury flavour of bouncy braised pork skin.

This tender braised pork tongue was crunchy and nicely, lightly flavoured. This is one of the best pork tongues I have tried.

The braised chicken were tender, delicious and smooth as they were not fried before braising.

The braised eggs and braised fried tofu. The tofu has a nice crisp outer layer while the inside was soft and smooth.

I noticed that the different innards here have slightly different tastes - a subtle difference in flavour and not only in texture. Usually the KTK parts taste identical in average KTK stalls. I asked the lady boss about this and she told me that she braised the different parts separately in different pots. This retained the unique flavour of each part, which would be lost in those stalls that throw everything together and braise it all in one big pot. Attention to details like this set Fourstorey Kway Teow Kia apart from the average KTK stall.

The cabbage stir fried with chopped shallots and dried shrimps was crunchy, fragrant and savoury.  

Sayur-Manis-Johor-Bahru

I strongly recommend this fried sayur manis which is seldom seen in kway teow kia stalls. Indeed, I have not seen this anywhere else. The fresh sweet sayur manis blends well with the savoury sauce with hints of spicy hot from the chilis.

Unlike the Teochew style, in the Cantonese style, the kway teow is not served with the same braising sauce used in cooking the innards.

Instead, it is served in a tasty broth made specially for the kway teow. The broth is made with stock bones and flavoured with pork lard crackles and fried shallot crackles.

The perky, stinging spicy and fragrant chili sauce for the kway teow kia.

Besides the kway teow kia we also had Fourstorey's famous fried chicken chop. The crispy batter encased the tender juicy chicken meat inside its crackly crust.

The chicken chop is served with not one, not two but three(!) types of sauces (as they say in those afternoon tacky Hollywood Sellavision commercials).

Fourstorey kway teow kia is at the right hand corner of this four storey flat at Taman Ungku Tun Aminah.

Fourstorey stall and its surroundings might look humble but the quality of their kway teow kia and fried chicken chop which I tried today are among the best in Johor Bahru.

If you want to impress your friends that you know the unlikely nooks and crannies where the good food of Johor are, Fourstorey should be on your food trail.

In Johor Bahru, I know of only one stall that sells Kway Chap 粿汁, thanks to Johor Yummy member Candle Tay's recommendation.

Mdm Kee had been running this little kway chap stall for over 20 years. Don't underestimate this humble little kopitiam stall - it is one of the best kway teow kia stalls in JB.

The hardworking and friendly Mdm Kee opens the stall from 5:00am to 3:00pm everyday - that's very long hours not even counting the preparation and cooking time.

We are thankful to Mdm Kee for bringing us good food at reasonable prices. A set of kway chap with mixed offal, which we can choose, costs a very reasonable RM5.

Mdm Kee makes almost everything she sells herself. She cleaned the pork offal very well and there is no even the slightest hint of any other taste other than the natural sweetness of the offal. The offal were tender yet bouncy to the bite.

Mdm Kee's braising sauce is lightly herbal and savoury. It has a very pleasant savoury flavour, very unlike the often overly salty taste in average kway chap stalls. The braising sauce is also not oily.

59 Restoran Fifty Nine Kway Teow Kia and Braised Duck at Kee Kim Huat Kopitiam in Taman Sri Tebrau, Johor Bahru, Malaysia



The kway teow kia and braised duck at 59 Restoran Fifty Nine stall in Kee Kim Huat kopitiam in Taman Sri Tebrau is one of JB's old favourites :) 
 
 
Ah Hua and his wife have been selling their popular kway teow kia and Teochew braised duck for over forty years.


This hardworking couple still makes one of the best and most popular kway teow kia and braised duck in Johor Bahru.
 
 
My plate last night of mixed braised pork offal and braised duck with a bowl of kway teow kia noodles. A little bit of everything. 

The dominant flavour of the braised pork offal and braised duck was their natural sweetness brought out and enhanced by the subtly herbal braising sauce. The pork offal were very well cleaned and there were no other smells or tastes other than the fragrant braising sauce and the natural sweet taste of pork and duck.
 

Ah Hua's braised pork skin was perfectly done - soft yet springy and tasted delicious.
 

Ah Hua's wife told me that they have a regular customer who would come with his family of four and orders 5 portions of braised pork skin every time. I enjoyed Ah Hua's pork skin myself and found the customer's obsession for it perfectly understandable :P


I especially liked Ah Hua's braised belly pork.
 
 
When I chew all the three layers of lean meat, fat and skin together, it created a chewy, smokey yet smooth blend of textures that was at the same time sweet and savoury. The skin in particular had a nice candy like gummy texture which I liked.
 
 
Ah Hua and his wife are justifiably proud of their braised duck. The tender duck meat had very little fat and when chewed with that thin sliver of skin became a mushy sweet treat in the mouth.
 

This little bowl of preserved cabbages was tangy and savoury with subtle spicy hints from the dried chili peppers.
 

It was neither overly salty nor too soft (which are the common faults with average preserved cabbages).
 

The crunchy yet spongy tau pok was a nice way to enjoy the tasty braising sauce.
 
 
We added a plate of tofu and large intestines. The large intestines were naturally sweet, tender and felt like braised tofu skin.
 

The soft and porous tofu sponged up the savoury braising sauce making it a delightful treat.


The kway teow kia noodles soaking in piping hot braising sauce. The tasty braising sauce was neither salty nor oily, and was thus highly drinkable.


Everything sold at the stall is home made by Ah Hua and his wife, including this chili sauce. The chili sauce was not overly spicy and it had a smooth, highly agreeable texture.
