Business Closed - Fourstorey Kway Teow Kia 四楼小吃 in Taman Ungku Tun Aminah in Johor Bahru

Kway-Teow-Kia-Johor-Bahru

Kway teow kia stalls are in every corner of Johor Bahru. Most are the mildly herbal Teochew style and there are a few stalls selling the more robustly flavoured Hokkien style. This was the first time I tried what the stall owner Mr. Chan called the Cantonese style.

Kway-Teow-Kia-Johor-Bahru

Fourstorey Kway Teow Kia is family run, by Mr. Chan, his wife, and Mun, the son. The Chans previously ran the famous curry pork ribs and chicken/pork chop stall in Taman Bukit Indah before reopening here in Taman Ungku Tun Aminah about two months ago. The Chans still sell their famous chicken/pork chops here but the popular curry pork ribs are available only on weekends.

Kway-Teow-Kia-Johor-Bahru

The very friendly Mr. Chan.

Kway-Teow-Kia-Johor-Bahru

Fried-Chicken-Chop-Johor-Bahru

Mun slices the kway teow kia and fries Fourstorey's famous chicken chop.

Kway-Teow-Kia-Johor-Bahru

We had a couple of mixed plates of kway teow kia with a bit of everything from braised pork, innards, skin, to chicken feet.

Kway-Teow-Kia-Johor-Bahru

The pig skin, like everything at Fourstorey was very well trimmed and cleaned. There was neither excess fat nor unwanted odours, just the lovely savoury flavour of bouncy braised pork skin.

Kway-Teow-Kia-Johor-Bahru

Lovely slice of braised pork with skin, fat and meat in one tender, savoury piece.

Kway-Teow-Kia-Johor-Bahru

This tender braised pork tongue was crunchy and nicely, lightly flavoured. This is one of the best pork tongues I have tried.

Braised-Chicken-Feet-Johor-Bahru

The braised chicken were tender, delicious and smooth as they were not fried before braising.

Kway-Teow-Kia-Johor-Bahru

The braised eggs and braised fried tofu. The tofu has a nice crisp outer layer while the inside was soft and smooth.

Kway-Teow-Kia-Johor-Bahru

I noticed that the different innards here have slightly different tastes - a subtle difference in flavour and not only in texture. Usually the KTK parts taste identical in average KTK stalls. I asked the lady boss about this and she told me that she braised the different parts separately in different pots. This retained the unique flavour of each part, which would be lost in those stalls that throw everything together and braise it all in one big pot. Attention to details like this set Fourstorey Kway Teow Kia apart from the average KTK stall.

Fried-Cabbage-Johor-Bahru

The cabbage stir fried with chopped shallots and dried shrimps was crunchy, fragrant and savoury.

Sayur-Manis-Johor-Bahru

I strongly recommend this fried sayur manis which is seldom seen in kway teow kia stalls. Indeed, I have not seen this anywhere else. The fresh sweet sayur manis blends well with the savoury sauce with hints of spicy hot from the chilis.

Kway-Teow-Kia-Johor-Bahru

The kway teow kia in the savoury, subtly herbal brew.

Kway-Teow-Kia-Johor-Bahru

Unlike the Teochew style, in the Cantonese style, the kway teow is not served with the same braising sauce used in cooking the innards.

Kway-Teow-Kia-Johor-Bahru

Instead, it is served in a tasty broth made specially for the kway teow. The broth is made with stock bones and flavoured with pork lard crackles and fried shallot crackles.

Kway-Teow-Kia-Johor-Bahru

The perky, stinging spicy and fragrant chili sauce for the kway teow kia.

Fried-Chicken-Chop-Johor-Bahru

Besides the kway teow kia we also had Fourstorey's famous fried chicken chop. The crispy batter encased the tender juicy chicken meat inside its crackly crust.

The chicken chop is served with not one, not two but three(!) types of sauces (as they say in those afternoon tacky Hollywood Sellavision commercials).

Chicken-Chop-Johor-Bahru

This is the tangy, sweet and spicy hot chili sauce.

Chicken-Chop-Johor-Bahru

The savoury sweet sauce is made with honey and apple jam.

Chicken-Chop-Johor-Bahru

The creamy mayonnaise dip.

Chicken-Chop-Johor-Bahru

The chicken chop is a hot seller for take away customers.

Kway-Teow-Kia-Johor-Bahru

Fourstorey kway teow kia is at the right hand corner of this four storey flat at Taman Ungku Tun Aminah.

Fourstorey stall and its surroundings might look humble but the quality of their kway teow kia and fried chicken chop which I tried today are among the best in Johor Bahru.

If you want to impress your friends that you know the unlikely nooks and crannies where the good food of Johor are, Fourstorey should be on your food trail.

Kway Chap 粿汁 (Kway Teow Kia) Stall in Multi Mart 满地好 Kopitiam in Taman Century near KSL City Mall, Johor Bahru, Malaysia

Kway Chap Johor

In Johor Bahru, I know of only one stall that sells Kway Chap 粿汁, thanks to Johor Yummy member Candle Tay's recommendation.

Mdm Kee had been running this little kway chap stall for over 20 years. Don't underestimate this humble little kopitiam stall - it is one of the best kway teow kia stalls in JB.

Kway Chap Johor

The hardworking and friendly Mdm Kee opens the stall from 5:00am to 3:00pm everyday - that's very long hours not even counting the preparation and cooking time.

Kway Chap Johor

Kway Chap Johor

Kway Chap Johor

We are thankful to Mdm Kee for bringing us good food at reasonable prices. A set of kway chap with mixed offal, which we can choose, costs a very reasonable RM5.

Kway Chap Johor

Kway Chap Johor

Mdm Kee makes almost everything she sells herself. She cleaned the pork offal very well and there is no even the slightest hint of any other taste other than the natural sweetness of the offal. The offal were tender yet bouncy to the bite.

Kway Chap Johor

Mdm Kee's braising sauce is lightly herbal and savoury. It has a very pleasant savoury flavour, very unlike the often overly salty taste in average kway chap stalls. The braising sauce is also not oily.

Onion Crackles Kway Chap Johor

Mdm Kee peels and fries these fragrant onion crackles herself everyday.

 Kway Chap Johor

The tangy and spicy chili sauce which Mdm Kee made herself everyday.

Mdm Kee's kway chap is definitely a Must Try. Thank you again Candle Tay for the recommendation.

Kway Teow Kia @ Solid Cafeteria 祖传果条仔 in Taman Johor Jaya, Johor Bahru, Malaysia

I have a long backlog of good food stalls in Johor that I have visited and liked, but have not yet blogged about. Once in a while, there comes a stall I liked so much that it jumps to the front of my blogging queue. Solid Cafeteria kway teow kia 祖传果条仔 is one such outstanding stall.

Solid Cafeteria's pork offal were very well prepared. They were all very well cleaned, braised till tender yet still al dente, while retaining the pork's natural sweetness.

Just one example. Look at the braised pork skin. It was curled into a springy coil because the skin was braised just right.

But the same can be said of the pork offal of many of Johor's best kway teow kia stalls.

The thing that really sets Solid Cafeteria 祖传果条仔 well apart from the rest is their special gravy

At Solid Cafeteria, the pork offal were drenched with a dark, gooey, syrupy herbal gravy instead of the usual light herbal broth found elsewhere.

Solid Cafeteria's gooey gravy is silky smooth, delicately herbal and with pleasant sweet notes. It is easy to fall in love with (or is it get addicted to?) Solid Cafeteria's flavourful, savoury herbal gravy. The distinctive flavour and taste came from brewing many blended herbs together with lots of large stock bones for hours.

The owner MR Ong said the traditional recipe came from his mother which he later modified and improved upon.

Solid Cafeteria's signature gravy is so good, I am sure I would be perfectly happy to eat at least a bowl or two of plain white rice with just the gravy alone, and nothing else. I fact, I found myself slurping up all the gravy after cleaning my plate of pork offal. It was that good.

Solid Cafeteria is also famous for their signature braised duck. The slices of tender and naturally sweet braised duck meat were flooded with generous amounts of the same signature herbal gravy, that overflowed over the sides of the shallow plate.

The clean tasting kway teow noodles were smooth and complemented the pork offal and braising sauce very well.

The chili sauce was excellent too. Fresh, tangy, spicy hot and sweet.

I must remember to order these fried bean curd skin during my next visit. They look perfect for soaking up Solid Cafeteria's unique herbal gravy.

Will definitely revisit J

Taman Tasek Kway Teow Kia 果条仔, Johor Bahru, Malaysia

Tasek Guo Tiau Zi 果条仔 (kway teow kia) has been in business in Taman Tasek for over 30 years and has a loyal following from Malaysia and Singapore.

Many of my JB friends and readers who are fans of Tasek kway teow kia are adament that this is simply the best kway teow kia stall in JB. They are the ones whom when asked where is the best kway teow kia in JB, will answer "Taman Tasek!" with an exclaimation mark.

I tried Tasek kway teow kia yesterday and sure enough joined its fans - I liked it very much too. The feel of the taste and flavours was delicate, understated, subtle, mild, and gentle on the taste buds  -  classy, lah. And all these delicious food for RM31.

Let's take a closer look at a sampling of what we ate.

The pork intestines were thoroughly and perfectly cleaned, and beautifully braised till smooth, soft yet still retaining that gentle spring.

The braised pig's skin was soft and smooth like baby's skin, I dare say.

Excellent soft preserved vegetable in braising sauce. That lovely herbal taste with a nice balance of subtly salty and sweet.

Tasty soft, porous tofu that sponged up loads of flavourful braising sauce.

Unique braised chicken feet that is lightly coloured and subtly herbal.

The kway teow kia in a tasty, clear, drinkable herbal broth perfumed with aromatic shallot oil and bits of fried shallot crackles.

The kway teow kia is smooth, tender and complements the pork innards perfectly. I had two bowls of this J Ate and drank everything in it.

Foodie-Blogger, Tasek-Kway-Teow-Kia

Look who visited Taman Tasek kway teow kia. Tasek KTK is one of the JB hawkers featured on the coming NTV7 13 part TV series "Foodie Blogger 爱食客" hosted by popular artiste Coby Chong 庄可比. The premiere episode featuring Johor hawkers will be televised on NTV7 on 17 Mar 2013 at 6:00pm.

Guo Tiau Zi 果条仔 Tasek is definitely a Must Try for kway teow kia (kway chap) lovers.

And, I need to go back for these braised eggs which I somehow missed.
