Ikan Siakap Tiga Rasa at Sutera Village near Sutera Mall in Johor Bahru

Awww... I love this Ikan Siakap Tiga Rasa from Restoran Sutera Village (near Sutera Mall).

And, I think I will never get tired of it. (Ikan Siakap Tiga Rasa means Barramundi in Three Flavours, in English.)

This was Sutera Village's Ikan Siakap Tiga Rasa set for 4-5 persons. The Ikan Siakap was, of course, the centre piece of this set. The set came with two bowls of tom yam soup, kangkung belacan, and 4 or 5 plates of rice. There was also a telur dadar dish or omelette included (not in the picture). At RM45.00, personally, I feel that this set is good value for money.

The fresh siakap fish was skilfully deep fried and the oil nicely drained. It was dry and crisp outside, and yet a little of the natural juices was still intact.

The nicely deep fried siakap was smothered in a thick blanket of sweet, sour and mildly spicy pulpy gravy. There was a mound of diced pineapple cubes on top of the fish.

The chunks of fried fish went very well with the thick sweet, sour and mildly spicy gravy. The delicious pulpy gravy worked very well to whet our appetites in what the Chinese describe as "opening the stomach" 开胃.

This was the tom yam soup that came with the set. Sweet, sour and mildly spicy like the fish gravy but in a soupy form.

The blend of sweet, sour and spicy soup "opened the stomach", while the chicken and assorted vegetables in the tom yam provided the substance.
 
Kangkung-Belacan
 
The nicely done kangkung belacan provided the tasty greens to complete the set. (We can choose fried beansprouts, if we like.)

Meet Norhayati, the lady boss behind the delicious Ikan Siakap Tiga Rasa. Norhayati hails from Kelantan and I wonder if that has anything to do with this Thai inspired dish.
 
This was my third visit to Sutera Village and with each visit I like this little, new restaurant a little bit more. I found the food tasty, reasonably priced, and the air conditioned shop clean and comfortable.
 
Sutera Village is part of the emerging trend of young entrepreneurs opening contemporary style eateries serving traditional cuisine handed down from their parents and grandparents. These young entrepreneurs who are shaping the future of Johor's food culture and scene deserve, our support.

Fish Head Asam Pedas at Sutera Village Near Sutera Mall, Johor Bahru

Farid the friendly owner of Restoran Sutera Village invited Johor Kaki to try their Fish Head Asam Pedas which they have recently added to their menu.

The Fish Head Asam Pedas is served as set meals to cater to small groups and families. The set meals come in 2-3 person servings and in 4-6 person servings. Three types of fish are available, namely Ikan Siakap, Ikan Merah and Ikan Kaci.
 
We had the Ikan Merah fish head asam pedas set for 2-3 persons for RM50.
 
Asam-Pedas-Johor-Bahru
 
The centrepiece of the set was, of course, this Ikan Merah fish head cooked in asam pedas. Sutera Village's asam pedas uses the home recipe of Farid's grandmother, which Norhayati (Farid's wife) has mastered.

The asam pedas gravy was made with many ingredients. Those that I could see include tomatoes, onions, lady's fingers, torch ginger flower, curry leaves and many ground spices.
 
In terms of taste and flavours, Sutera Village's asam pedas resembled that from the popular restorans Merlin and Coco Garden in Muar and Restoran Ikan Asam Pedas in Kluang.
 
The asam pedas is sourish from asam (tamarind) and salty from (I guess) belacan and preserved limes. The soupy asam pedas gravy was only mildly spicy with the mix of ingredients adding interesting notes and textures to the gravy.

The fresh Ikan Merah fish head itself was quite large, more than enough for 3 people to share. The head was served whole, unlike some places that slice the head in half.

There was also this chunky piece of fresh Ikan Merah steak included. So, friend or family in the party who is not a fish head person, could still join in the asam pedas set meal.
 
For the side dish, we have a choice of either fried beansprouts or fried kangkung belacan. We tried both :))

The beansprouts were nicely executed. The plump sprouts were still crunchy and juicy, and sauce was tasty.
 
Kangkung-Johor
 
The kangkung belacan was just as well prepared and had that touch of savouriness from the belacan.
 
Sutera Village's fish head asam pedas set was satisfying and the dishes had that home cooked feel. The atmosphere in the restaurant was relaxed and unhurried. Food is prepared in the small quantities ordered and served up straight from the kitchen freshly cooked, just like at home.

Sambal-Johor
 
I need to mention Sutera Village's sambal chili. It is freshly made with grounded green chili. Very spicy and had that savouriness that I guessed came from mixing in belacan.

Ayam Penyet at Sutera Village near Sutera Mall in Taman Sutera Utama, Johor Bahru (Business Closed)

My family and friends know that I am a big fan of Ayam Penyet. When my office was not too far from my favourite Ayam Penyet stall, I had Ayam Penyet at least once or twice a week, to the chagrin of my lunch kakis.

Sutera Village just opened for business at the popular shoplots near Sutera Mall and the owners Farid and Norhayati invited me to try their Ayam Penyet. I am not sure if Farid and Norhayati knew my craving for Ayam Penyet :P 
 
Ayam Penyet
 
Sutera Village is a simple and cosy café with a neat air conditioned interior and an al fresco dining area outside. Sutera Village is managed by Farid and Norhayati supported by a Chef who had experience working in a famous hotel in JB.
 
To me, good ayam penyet has four qualities. The best Ayam Penyet is where good chicken, sambal, rice and soup all come together.
 
Ayam-Penyet
 
At Sutera Village, the large chicken thigh was fried till golden brown yet the flesh was still tender and slightly juicy.
 
Ayam-Penyet
 
Sutera Village uses fresh chicken which is softer, moistier and sweeter. Average ayam penyet stalls use frozen chicken so the meat tends to be fibrous, dry and more or less tasteless.
 
Ayam-Penyet
 
Sutera Village serves a pulpy green chili sambal which is spicy hot, tangy and savoury. This sambal is good for dipping the chicken daintily as it enhances the chicken meat's flavour. It would be perfect if I could also have a milder and sweeter sambal that I can mix into the rice in large dollops, just like the way we eat nasi lemak. It's just my own quirkiness and I shall ask for this next time :P 
 
Beriani-Ayam-Penyet
 
Sutera Village is especially proud of their unique Nasi Beriani Ayam Penyet which is served with Basmati rice. The fragrant rice cooked with many spices is served compacted which many people like. Personally, I prefer my beriani rice to be looser and fluffier.
 
Ayam-Penyet
 
The Beriani Ayam Penyet costs RM10.90 and Sutera Village also serves the basic Ayam Penyet with steamed white rice at RM8.90.
 
The accompanying chicken soup has body and was tasty, similar to those at other ayam penyet shops that I also liked.
 
Sutera Village's Ayam Penyet would be my choice if me or my friends are near Sutera Mall area and are craving for Ayam Penyet. 
 
Chicken-Nuggets
 
We also had this chicken nuggets served in a large glass. The chicken nuggets go very well with that smooth eggy buttery slightly sweet sauce in the background. 
 
Fish-and-Chip
 
The fish and chips made with fresh Ikan Siakap at RM11.90.
 
Farid and Norhayati said I should also come back to try Sutera Village's Tangkak style Nasi Lemak and their family recipe Asam Pedas. I am looking forward to that :)
