Even turning out bowls of kway teow at the rate of one per minute, customers still have to wait, especially during lunch. But, everyone waits patiently as they all love Ah Meng's special touch with the kway teow.

I ordered the basic RM5 set which consists of a bowl of kway teow noodles with sauce, and thin slices of pork plus a bowl of soup with liver slices.

The kway teow and sauce were good but didn't really awed me as there are other kway teow stalls in JB that serve a similar standard of kway teow.

To me, Ah Meng's artistry is in how well he cooked the ingredients like this pork liver. The liver was expertly cooked so that it has bouncy mouth feel, and inside, it is smooth with a fine powdery texture. Ah Meng's humble pork liver tasted like some of the foie gras I have tried.

The tiny and thin pork slices were sweet and soaked up some of the sauce when I tossed the kway teow in the bowl. This turned the tender pork slices sweet, savoury and slightly spicy - I like this.

I look for stalls that make their soup in huge drums with all the bone stock goodness simmering inside. Kue Teow Meng's pork broth is light yet well bodied, infused with savouriness, clean tasting and have very little oil.

At additional cost, customers can have fresh oysters, pork kidney, fish and other choice ingredients.

Teochew Kway Teow Soup at 锦都茶室 in Johor Bahru

Johor Yummy member Charles Tan recommended 锦都茶室 and many other members like Candle Tay and Kumes quickly chipped in suggesting that we should all go and give the shop a try.

锦都茶室 is one of the shops at a quiet corner of Taman Century along Jalan Dato Sulaiman, just a few doors from the popular Poh Kee 宝记 Teochew Kway Teow Soup.

The large yellow banner says 锦都茶室 serves Teochew kway teow soup, fish bee hoon soup, curry laksa, wanton mee, and bitter gourd soup.

The friendly boss, Mr. Tan used to work in a roast meat shop in Singapore. He moved back to Johor Bahru after his marriage and has been a kway teow soup hawker for 32 years. Today, Mr. Tan runs 锦都茶室 with his daughter and son.

We ordered a Teochew soup with mee pok and a fish soup with kway teow (dry). Don't ask me why I ordered such a combination. Perhaps, I was still jet lagged from a longish trip to Australia .... It turned out to be an excellent breakfast despite my odd orders :P

The mee pok still has a slight spring despite soaking in the soup for quite a while, while I took photos. I expect the dry version to be even better.

The dry kway teow - the soy based sauce with a little lard is gummy and gooey. I asked for chili, hence that glob of maroon in the picture. When tossed and stirred, the kway teow became like a dark starchy ball of yarn. The chili is heavy with dried shrimps (hae bee).

The fresh slice of fish is so tender that they kept breaking apart when I tried to take this picture. Mr. Tan goes to the market to buy fish in the morning of every business day, so we are assured of it's freshness. This also explains why 锦都茶室 is closed on Mondays, as the wet markets are also closed on that day.

This humble piece of unphotogenic pork liver tastes superb. It is fresh and cooked in a way that reflects Mr. Tan's over 30 years of experience. Perfect mouth feel and taste.

I was surprised to find a slice of abalone in a RM5 soup. Not of exquisite quality (it would be unfair to expect more) but it was quite a nice touch, really.

锦都's soup made with pork bones and anchovies is full bodied. Mr. Tan adds in slivers of fresh ginger to cook and dashes of white pepper before serving. So, 锦都's soup is slightly peppery. I like this variation and differentiation from the numerous Teochew kway teow soup stalls in JB.

Ipoh Kway Teow Soup in New Star Kopitiam Near Plaza Sentosa, Johor Bahru, Malaysia


Today, my friend Bryan brought me to this little stall at New Star kopitiam near to Plaza Sentosa (the former Lien Hoe Complex) in Taman Sentosa.
 

Bryan said I must try this stall's Ipoh Kway Teow soup.


One sip and I was literary bowed over by the full bodied soup which had a distinct prawny, umami flavour.


Other than the soup, the rest of the ingredients that made up the dish such as the hor fun, prawns and pieces of chicken were pretty ordinary in taste. But, the outstanding soup alone was enough to make me add this stall to my list of favourites.


When I saw the little mountain of prawn heads used to make the soup, there was little wonder as to why the soup was so deeply prawny and umami.


Furthermore, this stall uses sea prawns which are more flavourful than farm bred freshwater prawns.


I will be back to try out their equally popular prawn mee.

Lau Di Kway Teow Soup 老弟潮州粿条汤 in Downtown Johor Bahru, Malaysia

 
Lau Di Kway Teow Soup 老弟潮州粿条汤 is an old gem in a pretty forgotten corner of JB old town.
 

MR Er's grandfather, Lau Di, started this Teochew kway teow soup stall before the Japanese Occupation of 1942.

Today, MR Er carries on the family tradition using the same methods and recipes of his grandfather, Lau Di 老弟. MR Er's uncle Ah Sang runs Sang Heng, the other old style kway teow soup stall just across Jalan Wong Ah Fook.


Lau Di had its heydays when the CIQ was at the old location as the stall was just next to the CIQ then. Since the CIQ shifted, traffic flow to Lau Di was much reduced. 

Most of the customers here are old regulars who know where the best foods are in JB and a new generation who tagged along with their parents. Though just across the Causeway, Lau Di doesn't have much Singapore customers nowadays.
 
 
Today, I decided to try mee kia instead of my usual favourites of either kway teow or mee pok. I asked for chili paste to be added to my soy and lard based sauce.
 

Those pork lard crackles that magically turn plain and simple traditional noodles into tasty delights. 
 

After a vigorous stir, the fine film of sauce and lard coated mee kia was tasty and tacky yet smooth. The noodles were el dente (QQ). MR Er told me that his wife and daughter make the fresh egg noodles everyday at home.


The same too for these fish balls and most of the ingredients which had been home made all these years.

 
The most striking thing about Lau Di was their soup. I liked Lau Di's murky, old style soup very much. Lau Di's soup had that distinct prawny aroma.
 

The cloudy soup has that umami flavour and nice prawny taste. The full bodied soup was not oily yet it felt smooth.


As usual, when making my order, I asked for no minced pork in my noodles as most kway teow soup stalls had much more fat in the minced pork than I would like. Later I noticed that Lau Di's minced pork is made completely with lean meat.


So, for my next visit, I shall ask for this minced pork which I am sure adds texture and flavour to the kway teow soup.
 

Lau Di is another heritage hawker in JB with that traditional old style taste and flavour worth visiting regularly.

LJ Noodle House Kway Teow Thng (Soup) 老江粿条 in Taman Impian Emas, Skudai. Johor, Malaysia


Teochew kway teow thng or soup is everywhere in Johor Bahru, so it is very difficult to stand out in this crowded field. LJ Noodle House has done so well that it has three outlets, in Taman Ungku Tun Aminah, Taman Pelangi and the mother shop in Taman Impian Emas.
 

We stumbled upon LJ Noodle House while driving around and searching for a good brunch in Taman Impian Emas. We were attracted by the large crowd in LJ Noodle House and decided to check out what the buzz was about on a Monday mid morning.

At first sight, LJ Noodle House was like any other popular Teochew kway teow thng shop. Same arrangements, same clientele profile and the same menu.

At the kitchen out in front, an Indonesian lady was doing the cooking whereas in other top kway teow thng shops, it was invariably the boss personally handling this critical station. The boss Lau Ciang was at the shop, making sure that everything was running smoothly and well.

 
 
 
We made our orders anyway, each of us in a party of four ordering a different combination of soup and noodles.

 
 
The ingredients looked ordinary, little different from what we would find in similar famous kway teow thng shops. Fresh prawns, canned abalone, fish balls, fish cake, slices of pork, fish and bits of pork innards. 
 

But, the first sip of that cloudy soup woke up our sleeping taste buds from the Monday doldrums! Wow, it's a delightful difference.

Whereas in other famous kway teow thng soups, where the fresh fish is usually the dominant flavour, here in LJ Noodle House, it was a good balance of fresh fish and pork flavours.

The tasty soup had good body, smooth yet not oily and addictively lovely.

How good?
 

Well, it was good to the very last drop.


After we were done with the impressive kway teow soup, I observed the Indonesian kak kak at work to spot the difference that made the difference at LJ Noodle House.
 

Kak kak was really efficient and skillful, and had command of the kitchen in a calm and cheerful style despite the capacity crowd. Amazing grace.
 

Then I realised that, here in LJ Noodle House, kak kak cooked each bowl of soup separately. It's not the usual way like in other stalls where the fresh ingredients were merely blanched in soup.
 
 
 
In LJ Noodle House, kak kak actually made the soup, one by one. It's amazing that despite this, none of the customers in the full house shop had to wait very long for their delicious kway teow soup.

The meal for 4 of us with drinks came to RM37.

I asked my kakis whether they would recommend LC Noodle House to their friends, and they all gave a strong affirmative.

LJ Noodle House is definitely a Must Try.

Teochew kway teow thng or soup is everywhere in Johor Bahru, so it is very difficult to stand out in this crowded field. LJ Noodle House has done so well that it has three outlets, in Taman Ungku Tun Aminah, Taman Pelangi and the mother shop in Taman Impian Emas.
 

We stumbled upon LJ Noodle House while driving around and searching for a good brunch in Taman Impian Emas. We were attracted by the large crowd in LJ Noodle House and decided to check out what the buzz was about on a Monday mid morning.

At first sight, LJ Noodle House was like any other popular Teochew kway teow thng shop. Same arrangements, same clientele profile and the same menu.

At the kitchen out in front, an Indonesian lady was doing the cooking whereas in other top kway teow thng shops, it was invariably the boss personally handling this critical station. The boss Lau Ciang was at the shop, making sure that everything was running smoothly and well.

 
 
 
We made our orders anyway, each of us in a party of four ordering a different combination of soup and noodles.

 
 
The ingredients looked ordinary, little different from what we would find in similar famous kway teow thng shops. Fresh prawns, canned abalone, fish balls, fish cake, slices of pork, fish and bits of pork innards. 
 

But, the first sip of that cloudy soup woke up our sleeping taste buds from the Monday doldrums! Wow, it's a delightful difference.

Whereas in other famous kway teow thng soups, where the fresh fish is usually the dominant flavour, here in LJ Noodle House, it was a good balance of fresh fish and pork flavours.

The tasty soup had good body, smooth yet not oily and addictively lovely.

How good?
 

Well, it was good to the very last drop.


After we were done with the impressive kway teow soup, I observed the Indonesian kak kak at work to spot the difference that made the difference at LJ Noodle House.
 

Kak kak was really efficient and skillful, and had command of the kitchen in a calm and cheerful style despite the capacity crowd. Amazing grace.
 

Then I realised that, here in LJ Noodle House, kak kak cooked each bowl of soup separately. It's not the usual way like in other stalls where the fresh ingredients were merely blanched in soup.
 
 
 
In LJ Noodle House, kak kak actually made the soup, one by one. It's amazing that despite this, none of the customers in the full house shop had to wait very long for their delicious kway teow soup.

The meal for 4 of us with drinks came to RM37.

I asked my kakis whether they would recommend LC Noodle House to their friends, and they all gave a strong affirmative.

LJ Noodle House is definitely a Must Try.
