Johor Famous Bao 包 at Wee Hoi 惠海 Kopitiam in Gelang Patah

After Leslie got his bagful of fresh wild caught prawns and we all got our gigabytes of photos at the Pontian fish market, our friend David brought us to Gelang Patah for Wee Hoi's famous old school bao 包. This is the same kopitiam serving Miki's favourite "3 for 1" kopi.

When we arrived at about 12:30pm, some people were milling around while others were sitting, sipping coffee. They were killing time, waiting patiently for something.

When the minivan arrived with blue plastic trays loaded with snowy white buns, the boss and lady boss sprang into action. The first task was to bag the buns for pre-order takeaway customers.

The buns are made by a granny who is an elder relative of the boss Mr Ho. On weekdays. granny makes only 500 buns; a little bit more on weekends. This cardboard box of takeaway order of 100 buns by just one customer got us nervous. We were relieved when a quick check with David confirmed that he had submitted our orders :D

Actually, I thought this was hardly necessary as the whole stock was taken away or eaten within 30 minutes of arriving at the kopitiam :D

The 梅菜包 filling of moist, not overly salty preserved greens wrapped in a pillowy, airy, snowy-hued slightly sweet bun. The bun had excellent bite and mouth feel with a lively bounce (no joke).

James patiently peeled the skin off the 扣肉包 braised belly pork bun revealing the soft airy lattice below. I wanted to call this creation the "fur bao" but James preferred to name it the "snow bao".

I actually did not taste the 扣肉包 but Lisa loved it because the tender flavourful stuffing was a nice balance of meat and fat.

The peanut bun has generous stuffing of nicely ground fried peanuts with a little bit of sugar.

As quickly as it started, after the frenzy that swept away all the bao, Wee Hoi returned to it's idyllic slumber just like any back row kopitiam in small town Johor.

Leslie was so impressed by the exceptional bun that he felt that it is worth making the trip from Singapore to Johor just for this alone.

Wee Hoi 惠海 is one more good reason to visit rustic Gelang Patah for food. I will surely be back often.

Johor Coffee and Eggs at Wee Hoi 惠海 Kopitiam in Gelang Patah

Today, we went to the wholesale fish market at Pontian with Leslie Tay of iEatiShootiPost and our mutual friends, David and Miki. After our fruitful foray at the fish market, Miki suggested that we go to Wee Hoi 惠海 kopitiam in Gelang Patah to try their kopi (coffee) which is "so good that you will have 3 cups".

Wee Hoi is a typical small town kopitiam. Wee Hoi's main claim to fame is their traditional bao (buns). When we arrived at about 12:30pm, customers were already waiting for the bao to arrive. Meanwhile, everyone was relaxing with a good cuppa tea or Wee Hoi's popular coffee.

Wee Hoi's coffee is freshly brewed at the back of the kopitiam.

Wee Hoi's coffee is light bodied but aromatic and robustly flavoured with a quite strong aftertaste. It tastes similar to coffee at Daily Grain in Taman Perling and Keng Guan Hiong in Pontian, both of which I liked.

I like Wee Hoi's coffee for it's robust distinctive flavour and aroma.

I certainly can have three of this coffee though perhaps not in quick succession in one sitting because I found the caffeine kick rather strong. It didn't score hat tricks with everyone though, as some found it a little acidic and needs a bit of getting used to.

As Wee Hoi serves soft boiled kampong chicken eggs (which is harder to find in Singapore), Leslie decided to give this a try.

Leslie's daughter Megan was the appointed Official Egg Taster for an unbiased assessment. Megan whose credentials include eating eggs everyday, immediately showed her egg tasting mettle by eating her eggs the expert's way.

A good sign - Official Egg Taster polished off the egg in three smooth slurps and looked blissfully satisfied as she savoured the eggy flavours lingering on her finely tuned taste buds.

Suspenseful moments as we held our breath, waiting for the Official Egg Taster to gather her thoughts.

Hurrah! We were relieved when Official Egg Taster broke into a smile as she delivered her final verdict. It's official - Kampong chicken egg is indeed tastier than ordinary farm chicken eggs. It has a nicer flavour and it's texture is better compared to runnier ordinary eggs.

Remember to try Wee Hoi's soft boiled kampong chicken eggs when you are around Gelang Patah :)

Star Chef Seafood Restaurant 星名廚 at Gelang Patah (near Legoland) in Johor

Dropped in on Star Chef seafood restaurant 星名廚 at Gelang Patah yesterday. It has been more than half a year since my last visit.

Alex, the boss is a good friend. Our first meeting was purely chance.

I was at 822 Roast Duck in TUTA and as the tables were all taken, I asked to share a table with Alex, whom I had not met before. When my roast duck arrived, I soon become self absorbed in taking pictures and scribbling notes about the taste on my little notebook. Alex was curious about what I was doing and we started to chat - that's when Alex told me that he is the owner of Star Chef. I had since visited Star Chef a few times from its old location in Skudai and now in Gelang Patah. So now, I am more like a friend visiting than the usual customer.

What to eat? Alex scanned his orange colour ice box to see what was available today. I was lucky, there was this huge ocean fresh wild Sea Bass head in the box. Alex told me that this fish weighed about 5 kilos whole (before it was cut up).

Let me explain a little. The stock of fish at Star Chef depends literary on the fishermen's catch of the day - Alex's stock are mostly wild catches from nearby Sungai Pendas. So the fish available is like a kind of lucky draw. Today was a good day. Alex had a large wild Sea Bass in the ice box.

Our Sea Bass was steamed and then blanketed with a tangy, sweet and subtly spicy Nyonya 娘惹 gravy.

The flesh was tender, refreshingly sweet and enhanced by the Nyonya sauce. The sauce was loaded with cherry tomatoes, onions, pineapples, lady's fingers, and lard crackles here and there. I love the tender flesh especially around the belly and under the pectoral fin. Needless to say, there was no fishy or muddy smell at all. Fish price is seasonal and Alex is selling this at RM60 per kilo now.

Lala clams in Superior Broth 上汤啦啦.

The live Lala clams were cooked just right - juicy and sweet.

There were lots of these browned diced garlic in our Lala clam dish. I like. The broth was thickened with evaporated milk. Next time, I shall try Lala clams with an unthicken gravy.

None of the seafood restaurants here in Gelang Patah offers live lobster but Star Chef does offer frozen Spiny Lobsters imported from Indonesia. The lobsters are cooked in a variety of ways like with Superior Broth, salted egg yolks, battered and deep fried, or stir fried with chopped garlic which was what I had.

The frozen lobster flesh is slightly drier and less bouncy than live lobsters. It also doesn't have that delicate flavour that makes live lobsters special. But at RM100/ kg for 300-400 gram sized lobsters, I feel that this is a very interesting option. Next time, I would try the Superior Broth version and see if it tastes closer to live lobsters. I would also want to try it cooked with Marmite sauce - never tried Marmite lobsters before, just curious about how it would taste.

And finally, crabs, which is what most people come to Gelang Patah for. I asked to try Star Chef's Marmite crab.

The crab is fried, tossed in Marmite based sauce, wrapped in aluminium foil and then briefly baked. The sweet crab meat is complemented by the savoury and sweet caramel-like flavour of Marmite sauce. Some might find this too sweet but it was good to me as I have a sweet tooth :)

Alex told me that he is having a crab promotion till end of Aug 2013. Star Chef will be selling crabs at 1kg for RM48. These are not those large crabs but those weighing in at around 300+ grams each. So each kilo will be around 3 crabs. The crabs can be prepared in any style stated in the menu e.g. steamed, cooked with salted egg yolks, black pepper, chili crab, with Marmite and so on. At RM48 per kilo, it is a good deal.

Remember to ask for this special rice. It is good quality rice cooked with braising sauce and there are added bits of pork lard crackles, dried shrimps and long beans. This is a delicious alternative to plain white rice at RM1.40 a bowl.

After our lunch, Alex took me in his pickup truck to Sungai Pendas to show me where he gets his fish supply. It is at the end of Jalan Tangung Kupang, at the mouth of Sungai Pendas (about 30 minutes drive from Gelang Patah. Map GPS: 1.379144,103.634778). The fish, crabs and prawns are caught by Orang Asli fishermen in those mangroves you see in the background of the picture above. The catch are landed at the jetties here in the morning and sold direct to restaurants and also members of the public. There are also a couple of seafood restaurants here, right at the jetty. The well known Yeo's Family Restaurant is also nearby. However, this afternoon, the place was very quiet as the market closed early for Ramadan. I am definitely coming back for the fish market and will also try out the restaurants here at Sungai Pendas.

The crab is fried, tossed in Marmite based sauce, wrapped in aluminium foil and then briefly baked. The sweet crab meat is complemented by the savoury and sweet caramel-like flavour of Marmite sauce. Some might find this too sweet but it was good to me as I have a sweet tooth :)

Alex told me that he is having a crab promotion till end of Aug 2013. Star Chef will be selling crabs at 1kg for RM48. These are not those large crabs but those weighing in at around 300+ grams each. So each kilo will be around 3 crabs. The crabs can be prepared in any style stated in the menu e.g. steamed, cooked with salted egg yolks, black pepper, chili crab, with Marmite and so on. At RM48 per kilo, it is a good deal.

Remember to ask for this special rice. It is good quality rice cooked with braising sauce and there are added bits of pork lard crackles, dried shrimps and long beans. This is a delicious alternative to plain white rice at RM1.40 a bowl.

After our lunch, Alex took me in his pickup truck to Sungai Pendas to show me where he gets his fish supply. It is at the end of Jalan Tangung Kupang, at the mouth of Sungai Pendas (about 30 minutes drive from Gelang Patah. Map GPS: 1.379144,103.634778). The fish, crabs and prawns are caught by Orang Asli fishermen in those mangroves you see in the background of the picture above. The catch are landed at the jetties here in the morning and sold direct to restaurants and also members of the public. There are also a couple of seafood restaurants here, right at the jetty. The well known Yeo's Family Restaurant is also nearby. However, this afternoon, the place was very quiet as the market closed early for Ramadan. I am definitely coming back for the fish market and will also try out the restaurants here at Sungai Pendas.

Star Chef Restaurant in Gelang Patah (near Legoland) in Johor, Malaysia


Alex the boss of Star Chef restaurant in Gelang Patah (near Legoland) invited me to visit his family's seafood farm in Pontian which supplies his restaurant. The seafood farm in Pontian uses sea water with modern machinery and technology to rear wild caught crabs and lobsters, and fish.

Star Chef restaurant is only about 20 minutes drive from their seafood farm, so only adequate stock of crabs are brought daily to the restaurant. Additional stock of crabs will be brought to the restaurant only when the stock runs low. In this way, only the freshest crabs are served at Star Chef restaurant.

No wonder when I went to Star Chef restaurant in Gelang Patah, I did not find piles of forlorn, tired looking crabs, that I often saw at seafood restaurants.

 
Star Chef get their crabs from Orang Asli fishermen. The daily catch of crabs are first kept in those large cement vats and fed with fish for about a week before there are ready for the table. Local crabs caught by Orang Asli fishermen are relatively small - about 500 grams each and they have sweeter meat. 


Star Chef also source their crabs from Sabah and Indonesia. These imported crabs are also brought to the farm for fattening. Sabah and Indonesian crabs are larger, commonly about 1 kilo each and they are not as sweet as local crabs.

The price of crab, is of course, seasonal. Tonight, the medium size crabs go for RM65. The large size crabs go for RM80.

I have already tried Star Chef's salted egg crab and their signature "King of Crab" which is crab baked in tangy sauce in an aluminium foil bag. I liked Star Chef's salted egg crab and am not a big fan of their tangy tasting crab as I personally associate crabs with spicy and savoury umami flavours. In that sense, I am a little conservative and less adventurous here.

Tonight, I opted for Star Chef's white pepper crab and black pepper crab.

The crabs were well executed with the umami flavours well seared in and nicely complemented by the spicy sauce. The pepper sauce was just nice and did not overwhelm the natural flavours of the meaty crabs. If the pepper sauce were a little more syrupy, drippy so that I can dab a bit of it onto the crab meat before eating it, that would make this dish perfect for me.


This plate of Vietnamese style spicy fried bee hoon for RM5. I like this bee hoon tossed and fried in seafood broth in a super heated wok till it is dry outside.


I was surprised how much effort and skill went into making this simple and humble dish.

A small steamed grouper fish RM28

We had this freshly caught grouper steamed and served with a light savoury sauce. The Chef did well to highlight the natural sweetness of the fresh grouper with the light sauce.
