Sauerkraut, Bratwurst and Potato Soup

A couple of years ago I had a Soup Supper Round-Up
on my blog.

A blog I follow from time to time called Simply Gourmet
shared this soup, and I have to say I was intrigued!

It is a weird sounding combination, I will admit, but I knew it was one I would try someday!

My cousin, Shawn, makes his own sauerkraut, and it is amazing!!
He saw the share of this soup, and he made it right away!
And he's made it time and time again!

Every time I run into him, he asks me if I have tried it, I keep telling him, I am going to, I SWEAR!

I decided that it was TIME I did!

Every Halloween we have a soup supper at our house before we go out Trick-or-Treating.
I make three soups, two that are family favorites, and I make one new one.

This year, I made my Homemade Chicken Noodle and Beef Enchilada, and this one!

My father in law teases me about my Polish/German heritage (all in good fun) and thought this soup didn't sound like anything he would like.
He had two bowls.

It was the first crock pot empty on Halloween.

It's the perfect blend of creamy with just a bit of tang... fabulous!

My Father in Law said I needed to re-name the soup, I wasn't sure what that would be, so I left well enough alone.

Sauerkraut, Bratwurst and Potato Soup
original recipe: Simply Gourmet

6 cups chicken broth
3 cups kraut juice + water (to make 3 cups)
3 potatoes peeled and cubed
1 small onion, diced
4-5 stalks celery, diced
2 cups sliced carrots
1 stick butter
1/2 cup flour
1 1/2 cups milk
2 cups cream
2 cups sauerkraut, drained
5 bratwursts, casing removed

Drain sauerkraut, reserving juice.  Add  water to kraut juice to make 3 cups. In a large soup pot, bring chicken broth and kraut/water to a boil. Add carrots and potatoes, cover and cook until veggies are desired tenderness.

In a skillet, chop and brown bratwurst until it gets nice and brown.
Remove from pan, set aside.
Do not clean pan.  Add onion and celery to pan, and saute for about 5 minutes.
Add sauerkraut, continue browning until sauerkraut is cooked well.
Return bratwurst to kraut mixture.

Add to broth.

In a small saucepan, melt butter, add flour to melted butter and whisk, making a roux.
Slowly add milk and cream to flour mixture.
Cook on low whisking as it thickens.

Pour into broth and let soup simmer on low until heated through.

We served with a crusty loaf of french bread, Ah-MAZING!

Stuffed Pepper Soup

Stuffed Peppers
are one of my most favorite dinners.  We eat them quite a bit actually.
They are not only yummy and filling, they are really quite good for you when you make them using brown rice and lean ground beef.
Here is my recipe for STUFFED PEPPERS.

The night I had ingredients out for stuffed peppers a couple of weeks ago, I decided I really wanted soup.
(it was 100+ degrees outside,
yea... I'm nuts like that)

I have seen tons of recipes for stuffed pepper soup around, and I didn't know which to choose, so like normal, I just started throwing stuff in the pot until it tasted good!! :)

I made a big batch of this, and have some in the freezer.
Yay for me!!

Stuffed Pepper Soup

3 cups brown rice, prepared
2 pounds lean ground beef, browned and drained
1 onion chopped
2 green bell peppers, cut into smaller pieces
6 sweet vine peppers, tri colored, sliced
6 cloves of garlic
4 cans (14.5 oz) diced tomatoes
1 (29 oz) can tomato sauce
4 cups low sodium beef broth
1 teaspoon marjoram
salt and pepper

Brown ground beef with a little salt and pepper in your skillet.  Drain.
Add to it the peppers, onion and garlic, and saute for about 5-10 minutes.
In your soup kettle or crock pot, add tomatoes, sauce, marjoram and broth.
Add beef/pepper mixture.
Prepare your rice, and set aside.

Simmer on the stove for about 45 minutes to marry the flavors.
Or cook on low in crock pot all day.
Before serving add rice.
Can be topped with cheese if you like.

Da.Men Hotpot 大门火锅 at Taman Sutera Utama (near Sutera Mall) in Johor Bahru

Tracy, one of the partners at Da.Men Hotpot 大门火锅 invited me to visit their restaurant in Taman Sutera Utama.

The 3 partners, Bryan, Tracy and Ivan are all Cantonese. Cantonese grow up having soup with almost every meal, so they are rather particular about their soups. The 3 partners also travel to Hong Kong often and wanted to introduce the HK style of premium steamboat to Johor.

Tracy carefully explained to us the three principles behind Da.Men Hotpot's food. Da.Men Hotpot is a premium steamboat restaurant catering to a more discerning clientele.

First, the soups are brewed using only natural ingredients such as stock bones, chicken or seafood. The broth is cooked in high heat for hours to dissolve the marrow and release their umami flavour. No artificial flavourings such as MSG is used. I can vouch for this as I had lots of soup that evening and yet did not have any aftertaste on my tongue nor felt thirsty afterwards.

Second, only fresh ingredients are used. Da.Men's fresh seafood are sourced from Pontian. Where possible live seafood is preferred and Da.Men will be adding stock tanks to store more live seafood for the hotpots.

Da.Men-Hotpot-大门火锅-Taman-Sutera-Utama-Johor-Bahru

Last but not least, the dipping sauces are freshly made in-house. No off-the-shelf sauces here at Da.Men Hotpot.

The condiments and sauce table where the customers mix their own dipping sauce to taste.

We tried two out of Da.Men's eight RM18.00 soups, namely the "Jumbo Pork Bone" soup and the "Fairy Crab" soup.

Da.Men-Hotpot-大门火锅-Taman-Sutera-Utama-Johor-Bahru

Our "Jumbo Pork Bone Soup". The soup is skimmed of excess oil and floating foam so it is served clear and clean. For RM18, this soup comes with free real soup refills (not just adding hot water as practiced in some average steamboat places).

Da.Men-Hotpot-大门火锅-Taman-Sutera-Utama-Johor-Bahru

I asked for the "Fairy Crab Soup" (RM18.00) because crab soup is one of my favourites. I love the rich umami flavour and sweetness of crab (more so than prawn soup). There is Chinese cooking wine 花雕酒 in Da.Men's crab broth, making it even more enticing to me :P

Da.Men-Hotpot-大门火锅-Taman-Sutera-Utama-Johor-Bahru

Considering that the soups are made only with natural ingredients without any MSG and that we can ask for any amount of free top-ups, I feel Da.Men's soups are real value for money.

Here are the additional ingredients we had to go with our soups.

Da.Men-Hotpot-Taman-Sutera-Utama-Johor-Bahru

We got another 3 more fairy crabs (RM5 each) to add to the "Jumbo Pork Bone Soup". I like that pic on the left - the crab looks like it is perched by the poolside, basking in the sun after a swim :P

Da.Men-Hotpot-Taman-Sutera -Utama-Johor-Bahru

The live tiger prawns (RM15) skewered with a slender wooden stick were still twitching on our plate.

Da.Men-Hotpot-大门火锅-Taman-Sutera-UtamaJohor-Bahru

This huge fresh "Meat Combo" for RM38.

Da.Men-Hotpot-大门火锅-Taman-Sutera-Utama-Johor-Bahru

Da.Men's "Five Treasure Meatballs" at RM26.40. The meatballs are hand beaten the way it is done in Hong Kong homes. Hand beating the meat stretches the fibres without breaking it and hence the meatballs have a tender yet bouncy mouthfeel. I am familiar with this technique of smacking the meat, learning it from my Hong Kong schoolmates during my uni days in Canada, years ago.

For a lot of people, Enoki mushrooms are must haves at steamboats :)

Da.Men-Hotpot-大门火锅-Taman-Sutera-Utama-Johor-Bahru

Fresh clams always sweeten any broth and they are delicious too.

Da.Men-Hotpot-大门火锅-Taman-Sutera-Utama-Johor-Bahru

I like lots of fresh and clean vegetables in my steamboat.

Da.Men-Hotpot-大门火锅-Taman-Sutera-Utama-Johor-Bahru

We also had Homemade Wanton (RM5.80), Prawn Wanton (RM6.80), Red Snapper Fillet (RM15), and Homemade Dumpling (RM5.80).

Da.Men-Hotpot-大门火锅-Taman-Sutera-Utama-Johor-Bahru

This "Shrimp Paste Fried Chicken" (RM9.80) is a must try. The chicken wings are marinaded with shrimp paste and deep fried without batter.

Da.Men-Hotpot-大门火锅-Taman-Sutera-Utama-Johor-Bahru

It is not as crackly crispy as those chicken wings fried with batter but the skin has its own likable kind of "tender crispness" and the flesh is tastier and more moist. I like this.

Da.Men-Hotpot-大门火锅-Taman-Sutera-Utama-Johor-Bahru

The soups at Da.Men are so good that I could just have them with noodles and be completely happy and satisfied.

Da.Men-Hotpot-大门火锅-Taman-Sutera-Utama-Johor-Bahru

Our Chinese tea (Tiet Kwun Yum 鐵觀音) served in an elegant tea set for only RM5.

Da.Men is a nice place to enjoy premium steamboat at reasonable prices and chat the evening away with family and friends. Just like the way it is in Hong Kong.

Muar Soup House near Classic Hotel, Muar, Johor

Kambing-Soup-Muar-Johor

It was the night after the "Big Haze" in Muar. The night before, Muar recorded a whopping PSI (Air Pollutant Index) of 741.

The famous Muar Soup House was on our supper plan arranged by Tourism Malaysia Johor. The haze had subsided considerably and Muar Soup House was temptingly just around the corner from Classic Hotel where we were staying. Peering through the receding haze and sniffing the air, we decided that it was safe enough to venture a little out of the hotel. So we pulled on our masks and proceeded for our soup supper as planned.

Soup-House-Muar-Johor

When we rounded the corner and arrived at Muar Soup House, there was already a big crowd of people out and about. Actually, it was Monday morning. LOL people were out perhaps celebrating an unexpected "public holiday" because schools and offices were closed on Monday due to the haze emergency.

Soup-House-Muar-Johor

Coming back to food, Muar Soup House started as a typical pedicab stall in 1958. Today, it occupies 3 shophouses in downtown Muar. Muar Soup House now has a full range of food and drinks like those at 24-hour Mamak cafes. But, at Muar Soup House, it is still their famous mutton and beef soups that are their main draw.

The-Soup-House-Muar-Johor

Even today, the famous soups are served from this signature push cart, just like the old days.

The big pots of simmering soup and meat - not very photogenic but something that many crave for.

Kambing-Soup-Muar-Johor

To stay out of the haze, we chose to sit inside the air con section which has plush seats and nice marble tables. Well past midnight and business was still brisk.

Mutton-Soup-House-Muar-Johor

My sup kambing at RM5. The soup was spicy, herbal, robust and not overly oily (excessive oiliness is a common fault of average sup kambing). The bowl was loaded with generous chunks of tender mutton. It had that mutton flavour that I like and yet was not overly gamey, so most people would enjoy it too. Needless to say, I finished the whole bowl with gusto.

Lamb-Shank-Soup-Muar-Johor

The sup tulang or lamb shank soup at RM7. (Another person's order, so I didn't taste this but everybody seemed happy and satisfied.)

The lady boss whipping up a Mee Bandung Muar - a Muar signature dish that I need to come back for at Muar Soup House. She is the second generation owner running this large shop with her younger brother. Her brother told me that a Muar Soup House branch will be opening soon in Johor Bahru :)

世纪好味 Pork Organ (Offal) Soup 猪杂汤 @ Kim Ling 金岭 Coffee Shop in Taman Perling, Johor Bahru

I was at Kim Ling 金岭 coffee shop this morning because a friend who lives in Taman Perling and who knows his food, strongly recommended the popular hawker stalls there.

Indeed, Kim Ling is a bustling breakfast hub in the morning. There are many stalls here serving a wide variety of hawker fare including pork organ soup, kway tiao kia (kway chap), yong tau foo, vegetarian food 素食, Penang fried kway teow, Penang prawn noodles, you char kway, chicken rice, chee cheong fun, mixed vegetable rice 经济饭菜, and more. Really.

I used to enjoy the Margaret Drive pork organ soup in 1980s Singapore with office colleagues but have not eaten pork organ soup for a very long time.

When I saw the enthusiasm of the pork organ soup 猪杂汤 stall owner at Kim Ling and the brisk business at his stall, I suddenly craved for this soup again.

MR Ang is the second generation owner of the stall that began business in Taman Century 40 years ago, before moving to Taman Perling 20 years later. Despite the years, the pork organ soup here is still prepared in the old, traditional 古早 Teochew way.

The soup which is boiled with bone stock is sweet, with hints of tangy sourness from the kiam chye (preserved cabbage), and not too salty. The slightly cloudy broth has good body and is not too oily. There were a couple of lard crackles floating in the soup and they were crunchy, nutty and nice. Hmm.. next time, I shall ask the boss for more of these.

The bowl of soup was choked full of slices of pork organs and meat.

Pig tongue

The boss cooked everything just right, retaining a nice chewy, tender texture and sweet taste.

Other people's soup. The beautiful kidneys were sold out before my turn L

世纪好味 pork organ (offal) soup was well worth exceeding my cholesterol and calorie limits J

世纪好味 pork organ soup stall also serves bitter gourd soup and braised pork trotters, both of which I intend to come back for.

Kim Ling 金岭 is a good coffee shop for people travelling in groups as there is something for everyone. The hawker stalls at Kim Ling open from 7:00am to about 2:00pm. In the evening, a zhi char stall takes over.
