Pecan Pie



Honestly?
I have never really cared for pecan pie.
Many may gasp, but I didn't grow up with it, and pecans were never my favorite.
Gimme peanuts and chocolate or ooooo...cashews...but pecans?
Not so much.

So when I took pie orders for Thanksgiving, I had to do a little research, and asked for Pecan Pie loving
TASTE TESTERS.
I had quite a few takers.

This pie got RAVE reviews.  I found it at a blog that I have always had wonderful luck with recipes
 "Gimme Some Oven" --  first off, what a clever name!  and when I read her post on this pie, it made my heart happy.  It was all about her grandma, this is her grandma's pie recipe.

I hope you enjoy it as much as the pecan pie lovers in my life did!



Pecan Pie

1 pie crust PRE-BAKED < --find how to here
1 cup sugar
1 cup light corn syrup
1 teaspoon vanilla
1 teaspoon salt
1/4 teaspoon ground cinnamon
4 eggs beaten
1 stick of salted butter
2 cups pecans

Pre-bake your crust (click here for instructions)

Preheat oven to 350 degrees for pie.
In a medium bowl whisk together sugar, corn syrup, vanilla, salt and cinnamon.  Add eggs and whisk until smooth.

In a small saucepan, melt butter and heat for about 4-5 minutes, until butter becomes brown and fragrant.  Stir often.  Pour butter into the sugar mixture and whisk to combine.  Stir in pecan and pour into prepared crust.



Bake for 50-60 minute or until center is set.  If your crust edges begin to get too brown, you can remove pie and cover crust with foil.  I didn't have that problem with mine at all.
Cool pie on rack for 3-4 hours before slicing and serving.

How to: Pre-bake a Pie Crust

Ever made a recipe that called to " pre-bake your crust" and you made the crust, put it in the pan, baked it, and it slide down the side of the pie pan into the bottom.
So, you maybe cussed a little, then sprinkled it with cinnamon and sugar and baked it the rest of the way,  ate it to heal your ego, bought a pre-made crust and used it instead?

No?

Errrrrr..... me either?

Now... in case you need to pre-bake a crust, here's the super easy way to do it correctly!

How To: Pre-Bake a Pie Crust

Lay your pie crust in your pie plate and form the crust edge.


Lay a large piece of heavy duty foil over crust and form to cover.


Bake at 450 degrees for 4 minutes.
Remove foil and bake for 2 minutes more.



Cool.

Fill with whatever your pie loving heart desires!!

Whiskey Peach Pie


My Mother-In_Law loves Peach Pie.
It's her favorite!
So, typically when I ask her what kind of pie to bring, she says peach...even for Thanksgiving!
FYI... It's nearly impossible to find fresh peaches in Nebraska in November.

But not in August when it's her Birthday!!
My friend, Betsy, has three fabulous peach trees in her yard, and is so sweet to let me pick as many as I want!!

So this past August I made my Mother-in-Law this Whiskey Peach Pie, I also made her this 



Whiskey Peach Pie

Double Pie Crust

Filling:
7 cups sliced fresh peaches
1/2 c - 1 c sugar
 (I used 1/2 c because the peaches were so sweet on their own!)
1/3 c flour
1/2 teaspoon ginger
1/4 teaspoon nutmeg
1 teaspoon cinnamon
3 Tablespoons whiskey

Preheat oven to 350 degrees.
Line a deep dish pie pan with the bottom crust.
Toss peaches with whiskey, sugar, flour and spices.

*I added a little more flour to mine, because the peaches I used were SO RIPE.  I didn't want my pie to be watery.  Start off with 1/3 cup and if they seem really wet sprinkle a little more on them

Pour into pie crust.

Add top crust.  you can just make a regular top crust, or a lattice topped one like I did here.


Ready for the oven!

Dust crust lightly with cinnamon/sugar. Bake for 45-60 minutes or until crust is golden brown.
Serve with ice cream!

Banana Cream Pie



My husband's birthday was this past Friday.  
Every year for his birthday I make him this 


It's his FAVORITE.

If you have followed my blog for a while, you may have read how we celebrate birthdays here.
The birthday boy/girl gets to choose their dinner and dessert of choice (homemade by Mom)

We had made some weekend plans, happy hour with some good friends on Friday night (then home for cake and presents with the kids) and dinner with some other good friends Saturday night.


That left Sunday for our family dinner celebration.
Might as well make it a whole weekend celebration.

The hubby requested Chicken Parmesan, Garlic Cheese Bread and Salad for dinner.
We had to have dessert!!

He loves Banana Cream Pie, last year I made him this 


and it was a hit!
This year I searched and found the recipe for this pie at a blog that I recently discovered called

This pie was so perfect!! It was light and fluffy and bursting with flavor.
I will TOTALLY be making this one again!!



Banana Cream Pie
A Spicy Perspective

Crust:
2 Cups graham cracker crumbs 
6 Tablespoons butter (melted)
1/4 cup sugar
dash of salt
1/2 teaspoon cinnamon
2 Tablespoons water

Filling:
2 cups heavy whipping cream
3 Tablespoons sugar
1 teaspoon vanilla
1 - 3.4 ox box of instant vanilla pudding
1 cup milk
8 ozs cream cheese
1 - 14 oz can sweetened condensed milk
4 bananas (divided)
1/2 cup coconut (toasted)

Preheat oven to 375 degrees.  I used my food processor to crumble my crackers.  I took about 14 crackers to get 2 cups.  If you want to be quick, buy the graham cracker crumbs!! ;)
Add to it your salt, sugar and cinnamon.  Combine with a fork.  Add the melted butter and water and continue to combine until the crumbs  are well blended.
Press into sides and bottom of a 9" deep pie pan.

Bake for 10 minutes, set aside to cool.

For filling, combine the pudding mix and cold milk and set aside.
In your mixer whip your cream and sugar and vanilla until its fluffy, set aside.
In your mixer, cream your cream cheese  and slowly add in the sweetened condensed milk.
Add to this the pudding and combine.
Fold in HALF of the whipped cream, reserving the rest.

Spread a small amount of cream mixture over graham cracker crust, and top with 3 sliced bananas.


(I doubled the recipe and made two pies!!)

Spoon the rest of the cream mixture over bananas and  top with whipped cream.
Cover lightly with plastic wrap and chill at least one hour.

Before serving top with one sliced banana and toasted coconut.

My Grandma's Rhubarb Pie



Today is my Grandma Czaplewski's birthday.  
She was such a delightful person, and I miss her all of the time.

I used to talk to her on the phone almost daily.  She passed when my oldest son, Spencer, was only one month old.  She was so excited to hold her first great grandchild, I hate that she didn't get to see him grow up to be the stellar person he has grown up to be.

I know that she is watching all of us from heaven.


I have mentioned in past posts, that I am definitely a "pie person" way before I would chose cake, pie is always my first choice.

Her rhubarb pie was my favorite.

A few weeks ago, my Mom's cousin, Shirley, (my grandma's niece) came for a visit from California.

She visited the town my grandma grew up in, and brought back some fresh rhubarb.

It only seemed right to make this pie in my grandma's honor.

My Aunt Edie had her recipe and I am sharing it with you today!

Grandma Czaplewski's Rhubarb Pie

6-8 cups chopped rhubarb
1 cup sugar
1 egg, beaten
1 cup raisins
3 Tablespoons flour
2 pie crusts
1 egg white, beaten

In a large bowl, mix rhubarb with sugar and flour. Next add beaten egg and raisins. Pour filling into pie plate lined with a crust.

So pretty!

Cover with top crust and brush with egg white.

Bake at 425 degrees for 10 minutes, reduce heat to 350 degrees and bake for another 35 minutes.

When I was a kid, my Grandma Martin used to make me this pie for my birthday.

I used to love going to stay with her in the summer, she was quite the baker!

She always made a pie while I was there,  and while she was making it, there was always "extra crust" that she would bake with cinnamon and sugar on it.
YUM!

For the longest time I struggled with the meringue, until I got my Kitchen aid mixer.... that thing ROCKS!!

Put the ingredients in, and let it whip until the meringue peaks!

This past weekend, I baked myself one, since she is no longer with me, I was feeling sentimental.

This pie isn't too sweet, and has a yummy chocolate custard!

Grandma Martin's Chocolate Meringue Pie

custard:
2./3 cup sugar
2 1/2 Tablespoons Cornstarch
1/2 teaspoon salt
3 egg yolks (save whites)
2 1/2 cups milk
1 1/2 teaspoon vanilla
4 Tablespoons cocoa

single pie crust

meringue:
3 egg whites
3 Tablespoons sugar
1/4 teaspoon salt
1/2 teaspoon cream of tartar

Preheat oven to 350 degrees.  Form pie crust into pie plate and pre-bake for about 15 minutes, or until crust is a light golden brown. Set aside.

Combine custard ingredients in saucepan on the stove, on medium heat. Whip with a whisk until thickened, will be a thick pudding consistency.  About 15 minutes.

Pour into pie crust.


In your mixer, combine meringue ingredients.  Whip until meringue forms stiff peaks.
7-10 minutes.

Spread over chocolate custard.

Bake in oven for 12-15 minutes, until meringue becomes a light golden brown, and is no longer watery.

Cool and enjoy.

Store in the refrigerator.

Lattice Topped Baked Apples

My friend, Tim, gets a lot of grief from his guy buddies for losing his "man card" when he posts 
pretty food to his facebook page.

He does a fabulous job!

Last week he made these baked apples that he found on foodgawker.com
They were super pretty!
My family LOVES apple pie, so I new that I had to try it.

The only thing, Tim doesn't use a recipe.
He sees it and wings it.
In that regard we have a lot in common.

So I figured I would do the same.... I winged it and wrote it down as I went!


The one tip he gave me, to place a small piece of crust in the bottom of the apple, because his sort of leaked out of the core base. ( I think he wanted me to test drive that idea to see if it worked, it didsu!)

Lattice Topped Baked Apples

8 granny smith apples
lemon juice
1/4 cup sugar
1/4 teaspoon cinnamon
1 1/2 Tablespoons flour
1/8 teaspoon nutmeg
1 pie crust, homemade or refrigerated
additional cinnamon and sugar for dusting

Preheat oven to 375 degrees.
Core and hollow 6 granny smith apples.   Squeeze a little lemon juice in each hollowed out apple and swirl around and dump out to help keep apples from browning. (this step isn't mandatory, but I did it, because I don't like when the apples get brown.) Peel and thinly slice the other 2 apples.

Combine sliced apples with flour, sugar and spices.

Divide and stuff hollowed apples.

Roll out pie crust and cut into 1/3" strips, form a lattice over the apple, and trim of the excess.
Place in muffin tins.

Lightly dust the tops with cinnamon and sugar.

Bake for 25-30 minutes or until crust is golden brown.

Serve hot out of the oven with vanilla ice cream topped with cinnamon.

Coconut Banana Cream Pie

My husband LOVES coconut.

His birthday cake, my Coconut Macaroon Tunnel Cake is one of my most read posts on my blog.

I have always wanted to make him a coconut cream pie, and I thought while I was baking up pies for Thanksgiving this year, I would try it out!

I hopped on pinterest and found lots of coconut cream recipes.
(if you want to follow me on Pinterest, there is a link up there on the left!)

Then I happened upon this recipe here.  I found it on a blog called Jan Can Cook, this one, not only had coconut, it had bananas, too! I decided to give it a whirl!

I hate to try a recipe out by giving it to someone, so I made it the Sunday before Thanksgiving as a trial run.
Of course my husband didn't object.

When I was little, my Grandma, my Dad's Mom, was a pie baker.
We all had our favorite, and she would make it for us on our birthdays, and my Grandma tried and tried to teach me to make crust.
But she didn't measure ANYTHING, and it was just like flour was flying and poof! It was done!

Did you have a "hope chest" when you were a girl?
I did.  It was a cedar chest made by my Grandpa, and it had all kinds of things I collected through the years, growing up.

My grandma gave me this pie plate you see here, when I was in about 7th grade.
It was her Mom's pie plate.
It's an enamel covered one, and I am sure most people would think it's seen better days, 
but it's a treasure to me.
I decided, for good luck, I would make my trial run in her pie plate.

It turned out FANTASTIC!!

Yes, I made THREE of these.

I am here to tell you, I don't even LIKE coconut, and I ate it, and loved it!

Without further ado, here is the recipe.  The recipe calls it "Lawry's Coconut Banana Pie."



Coconut Banana Pie

coconut crust:

1 stick butter, plus more for pie plate.
3 cups sweetened coconut flakes

pie filling:

4 egg yolks
3/4 cups sugar, divided
3 Tablespoons cornstarch
1/4 teaspoons salt
1/4 cup flour
3 cups half and half, divided
yellow food coloring, optional
2 teaspoons vanilla extract
2 bananas

whipped topping:

1 cup whipping cream
1 Tablespoon powdered sugar
(I doubled this, because I LOVE whipped cream!)

To make the crust, butter your pie plate generously. Melt the stick of butter in a frying pan, when melted, add coconut, and toast over medium heat.  Stir constantly browning evenly on all sides.

Press the coconut into the buttered pie plate to make a crust.  I reserved a little for the topping.
Refrigerate for 30 minutes.

Combine the egg yolks, 1/4 cup sugar, cornstarch, salt and flour in a small bowl.  Gradually add 1 cup of half and half, and combine.

In a saucepan, over medium heat, combine the 2 remaining cups of half and half and 1/2 cup sugar, bring to a boil, stirring so it doesn't scald.  When it comes to a boil, add egg mixture and stir with a whisk, cook until pudding thickens, will only take about a minute.

Remove from heat, stir in 2 drops of food coloring (optional) and vanilla.
Cover with plastic wrap, laying the wrap over the top of the pudding so skin doesn't develop as it cools.
Cool in the fridge.

Combine whipping cream and powdered sugar and whip with electric mixer until fluffy and dense.  I added a splash of vanilla to mine, too.  Keep in the fridge until you're ready to assemble the pie.

When crust and pudding are cool, slice bananas into pie crust.

Pour pudding over the bananas and spread out.

Top with dollops of whipped cream, spread to cover.
Top with reserved toasted coconut.

Refrigerate for 2 hours before eating.

His birthday cake, my Coconut Macaroon Tunnel Cake is one of my most read posts on my blog.

I have always wanted to make him a coconut cream pie, and I thought while I was baking up pies for Thanksgiving this year, I would try it out!

I hopped on pinterest and found lots of coconut cream recipes.

Then I happened upon this recipe here.  I found it on a blog called Jan Can Cook, this one, not only had coconut, it had bananas, too! I decided to give it a whirl!

I hate to try a recipe out by giving it to someone, so I made it the Sunday before Thanksgiving as a trial run.
Of course my husband didn't object.

When I was little, my Grandma, my Dad's Mom, was a pie baker.
We all had our favorite, and she would make it for us on our birthdays, and my Grandma tried and tried to teach me to make crust.
But she didn't measure ANYTHING, and it was just like flour was flying and poof! It was done!

Did you have a "hope chest" when you were a girl?
I did.  It was a cedar chest made by my Grandpa, and it had all kinds of things I collected through the years, growing up.

My grandma gave me this pie plate you see here, when I was in about 7th grade.
It was her Mom's pie plate.
It's an enamel covered one, and I am sure most people would think it's seen better days, 
but it's a treasure to me.
I decided, for good luck, I would make my trial run in her pie plate.

It turned out FANTASTIC!!

Yes, I made THREE of these.

I am here to tell you, I don't even LIKE coconut, and I ate it, and loved it!

Without further ado, here is the recipe.  The recipe calls it "Lawry's Coconut Banana Pie."



Coconut Banana Pie

coconut crust:

1 stick butter, plus more for pie plate.
3 cups sweetened coconut flakes

pie filling:

4 egg yolks
3/4 cups sugar, divided
3 Tablespoons cornstarch
1/4 teaspoons salt
1/4 cup flour
3 cups half and half, divided
yellow food coloring, optional
2 teaspoons vanilla extract
2 bananas

whipped topping:

1 cup whipping cream
1 Tablespoon powdered sugar
(I doubled this, because I LOVE whipped cream!)

To make the crust, butter your pie plate generously. Melt the stick of butter in a frying pan, when melted, add coconut, and toast over medium heat.  Stir constantly browning evenly on all sides.

Chicken Pot Pie

I was in need of a little comfort food last weekend.

I decided to make homemade chicken pot pie in my cute little crocks I love to use!

I was posting progress pictures on my facebook page while I was making them, and so many people asked for the recipe.
Well, I really wasn't measuring, but I thought I would share with you what I did.






I thought I would give you the recipe for making one large pie, instead of minis, but you will get the idea.


Chicken Pot Pie

1 whole chicken cut up
chicken stock
onion
Salt and Pepper
flour
milk
veggies: whatever you want, I used:
carrots
celery
potatoes
peas
double pie crust

Place cut up chicken and onion in a stock pot, salt and pepper and cover with chicken stock.
Place lid on pot and bring to a boil.
Reduce heat and continue cooking until chicken is done and begins to fall off the bones.

Remove chicken from pot.

Add your cut up veggies to the broth, and simmer them until they are a firm tender.
(they will continue to cook in the oven, you don't want them soggy.)

While they are cooking, de-skin and de-bone your chicken., cut up and put back in the pot with the veggies.
Add equal parts milk and flour in jar and shake to combine for your thickening agent.
Make sure there are no lumps!!

Add to simmering broth, and stir.  It will get thicker as it simmers.
Watch it for a few minutes, if you want it thicker, then add a little more flour/milk mixture.

Salt and pepper to taste.

Pour into prepared deep dish pie crust.  Top with crust and vent.

Bake at 375 degrees for about 45 minutes, or until crust is brown and flaky.

You can use whatever veggies you want, and as many as you want!  We used quite a bit, because we LOVE our VEGGIES!!

I am sorry this recipe wasn't more specific, next time I make it I will measure everything out!!

An Affair From the Heart - Apple Pie Filling in a Jar

This year our friends, Don and Gerry had a great apple crop.

They are so sweet to share with us!

Usually when I put away apples, I just freeze them,
this year I wanted to try something different.

I wanted to can them!



So I found a recipe on allrecipes.com, and adapted it to my liking.


I started learning to can last year, when my friend, Betsy and I canned spaghetti sauce.
I then tried my hand at a berry jam and peach ginger preserves.

We have eaten this over ice cream
(kids said it's like apple pie without crust!!) ...

...and over pancakes!

Don said he would just eat them out of the jar with a spoon!




Apple Pie Filling in a Jar

4 1/2 cups sugar
1 cup corn starch
21/2 teaspoons cinnamon
1/4 teaspoon nutmeg
1 teaspoon salt
10 cups water
2 Tablespoons Lemon juice
7 quarts peeled and slices apples

(I made mine in pint jars)

Sterilize all of your jars and lids in a canning pot, in boiling water for about 1 minute.  Put on a towel to dry and cool.  Transfer seals to a small saucepan of boiling water until ready to use.

In a large sauce pan, combine sugar, spices and water, bring to boil and simmer until it becomes thick and bubbly.  Stir frequently so it doesn't stick.  Remove from heat. Add lemon juice.

Peel and slice apples and pack into jars.

Pour syrup mixture over apples, and tap jars on the counter to let syrup fall to the bottom.  Fill jars almost to the top.

Make sure to wipe the rims of the jars with a damp cloth to remove any residue.

Place seals from boiling water on top and secure rings, don't tighten all of the way.

Place in a canning pot of boiling water, leaving space in between jars, submerged in water,  and water bath for 20 minutes.

Remove from heat and tighten the rings of the lids, turn upside down to cool on the counter, so jars seal.

Heart Shaped Spiced Peach Pocket Pies

I found these ADORABLE pocket pie presses made by Nordic Ware a week or so ago and 
of course I fell in love.

I (heart) Pie


I mean, c'mon, I LOVE anything heart and of course, PIE!
So this morning I decided in honor of National Pie Day I would bake up something cute for dessert tonight.
What makes a Monday better than dessert, right?


Here was the problem at hand... WHAT kind of pie to make?
The recipe that Nordic gave was for raspberry pie.  Now I would love that, but my oldest daughter hates ANYTHING with seeds. Raspberries were out.

I decided on a spiced peach pie filling.  I used a can of peach pie filling, cut the peaches into smaller bites,  and jazzed it up with 1/4 teaspoon of ginger and a pinch of cloves.

I *almost* always make my own pie crust.  But today I cheated and bought the Pillsbury roll out kind.
They worked just great!

When they are pressed you simply lay them on a parchment covered baking sheet, brush them with beaten egg and dust them sugar.  I used cinnamon sugar to amplify the "spice" flavor!

When I was little my Grandma always made my favorite pie as a child, Chocolate Meringue, when I would visit her. She made the most amazing pie crust!! 
After she had the pie ready to go in the oven, there was always "left over" pie crust.  She would roll it out for me and dust it with cinnamon and sugar.  I would stand by the oven wand watch it bake!!
I don't know what I was more excited about, that cinnamon pie crust, or the actual pie itself!

I decided to do the same today with what I had left over.
I cut them out in heart shapes with my medium sized scalloped heart cookie cutter and brushed them with egg and dusted them with cinnamon and sugar.

The pies bake quickly, only about 15 minutes at 400 degrees.
They smelled HEAVENLY!!

The hearts only baked about 9 minutes.


I love how they got all puffy!


I sampled a couple ( I made extra! ) with my coffee while they were warm!!


Serving them with Blue Bunny Cinnamon ice cream.
There is plenty of filling left over, so I think topping the ice cream with that is an outstanding idea!!

a pinch of ground cloves
2 Pillsbury roll out pie crusts
cinnamon sugar mixture
1 egg, beaten

Each pie crust will initially make 2 pockets.  Cut pockets out as directed on pie press package.
With a pastry brush brush egg around edges of hearts.
Fill with 2 Tablespoons of filling.
Press together, remove and place on a cookie sheet lined with parchment paper.
Brush tops of pies with egg, and sprinkle with cinnamon and sugar.
Bake pies approximately 15 minutes.

I made five pockets out of the 2 crusts, after rolling the leftover crust back out. I could have gotten six,  but tonight I only need five.

I used the remaining to cut my heart shaped pie crusts out, and brushed them with egg and dusted them with cinnamon sugar mixture.
Bake the cinnamon pie pieces only about 9 minutes.


this was seriously, so. darn. good.
