Homecoming Dinner

This past weekend I had about 30 of my daughter's closest friends over for dinner before the
Homecoming dance.

She is a Freshman this year, and having them all together like this seemed SO much easier!

centerpieces on the tables

They came with their parents and we did group pictures, then they came in and ate and "hung out" before it was time to head to the dance.

Thank you to all of the parents that helped drive!!

Dinner was pretty darn simple.  I had wanted to get a little more extravagant, but the thought of someone ruining their ensemble with pasta sauce or something had me too nervous!

The Menu:
Deli meat and cheese trays
Tuscan rolls
Chips and dip
Mini cupcakes
Chocolate chip cookies

Our school colors are red, black and white. So it matched my kitchen perfectly! Not to mention, it was Husker Game night! So I decorated with fall florals, gourds, pumpkins and black red, and white.

deli trays with meat and cheese

Tuscan rolls

sandwich fixin's

chips and French onion dip...LOVE my football pottery!

desserts... chocolate chip cookies

mini cupcakes, some with chocolate and some with vanilla frosting

pretty red and clear sprinkles, and what's a fall party without candy corn and peanut mix?

I "canned" fall blooms for the centerpieces and tied them with black and white ribbon

Here are a couple of pictures of the kids.

my kids before the night began

My son is a Junior, he headed out to celebrate with "kids his own age" at another party.

looking so nice. (looks like they get along ...right?!?!)

most of the group

pretty girls and their shoes

Can you believe we had to TELL them to "add some sass" to their pose?!?!

That's something I never thought I would say to MY DAUGHTER! "Get sassy!"

I think it went well, all in all.

Thanks for looking.

A "Dryer House Fire"

This past weekend was interesting.  I saw Teresa Giudice.  My Gymnastics Queen landed her back hand-spring.

My mom and dad's dryer caught on fire.

The last event was a rather surreal, "I can't believe this is happening" moment.  When you are standing outside your parents' house, watching the smoke escape through the windows, it truly stuns you.

This past Saturday was a well planned, busy day.  That morning we were busy with football and gymnastics practice.  Afterward I was meeting Hubby at my mom and dad's to go to a festival.  The sun was shining and it was warm and pleasant.

A perfect fall day.

When I pulled up my parents' drive about noon, my mother had my munchkins loaded into her car.  She was motioning to me and yelling from her car window.  There was much confusion; I had no idea what she was trying to tell me.  I pulled my car closer and I heard her yell that the house was on fire.

Before I continue, I need to explain that my parents live on a mountain.  They are on thirteen lovely, private acres.  Their house is all wood and the trees surrounding it are abundant with fall foliage.  While the setting is tranquil, it is not ideal in an emergency.

When I was able to park my car, my mother explained the dryer had caught on fire.  The alarm sounded but they were quick to dismiss it until they saw smoke from the other end of the house.  After dialing 911, and removing the munchkins from the house, Hubby found an extinguisher in the garage.

If I was present, I would have knocked him flat on his tushie before I let him back into the house.  I was not present.  And so he went back into the house.

The upside was he was able to put the fire in the dryer out.  The downside was that the fire had already spread into the wall.

He also came out of the house choking because of the smoke inhalation.

To make a very long story short, the fire trucks came.  We live in a small town which translates to EVERY fire truck came.  An ambulance came to check Hubby and the munchkins ran around in the wilderness.  Myself, Hubby and my mother wondered exactly what was happening inside the house, and how badly the fire had spread.

Thanks to Hubby and his extinguishing efforts, the damage was much less than what it would have been.  And aside from the house smelling like a barbecue smoker and some significant damage, we were lucky.

These past few days we have truly laughed much and counted our blessings.  All is well that ends well.

I am now reminding everyone to never run an appliance if they are leaving the house.  Never run an appliance if you are going to sleep.  And always check that your fire alarm is working properly.

As we start our week, I am hoping it is MUCH less eventful.

Happy Columbus Day! Be safe!

So honored to receive the Liebster Award

Friday evening I was waiting for my husband to come home from work, and take myself and our 8 year old twins to dinner at my favorite Mexican restaurant.   I was glad it was Friday, but tired from all of the cleaning and preparing for the Homecoming party I was having for my daughter and her friends.   Sometimes teenagers can make a mom feel a little unappreciated. So, with a sigh, I logged onto my facebook to see what my foodie friends had planned for the weekend.

I was so touched to see that Joan, from Chocolate, Chocolate and More Chocolate had nominated me for a blogger award called the Liebster Blog.

In German Liebster means (n.) beloved, dear, dearest, love

I was so honored that someone felt that way about my blog. Joan, you absolutely made my weekend, and touched my heart with your comment.

If you would like to see what Joan said about my page, and see the other lucky nominees, here is a link to her blog:

While you are there, stay awhile and look around at her yummy recipes and her informative and just plain special blog.  Thank you, Joan, for this very sweet award.

I am so glad my music selections can bring you some relaxation from time to time.
*~*~*~*

Today, October 24, 2011, I received yet another Liebster Award.. This time it was from Debi, her site is called Recipes for my Boys.   Debi is one of those dynamic women that I relate to.  Not only does she love to spend time with her family and be in her kitchen, she is a mother of twins!! There is just some kinship between mothers of twins.  Debi, thank you for sharing this award with me.  Your posts are always a favorite of mine. Thank you for always having something sweet to say, it's always a pleasure to visit your site.

*~*~*~*

So, the rules that come along with award are simple:

1) Show your thanks to the blogger that gave you the award by linking back to them.

2) Reveal your top 5 picks by leaving a comment on their blog.

3) Post the award on your blog.

4) Enjoy the love of some of the most supportive people on the Internet.

*~*~*~*

So, after taking a couple of days to decide I think I have my choices narrowed down.

I hope that all of you enjoy your Liebster, and display it proudly on your page.

Here they are in random order:

Curly Girl Kitchen - I love visiting her blog and all of the bright colors that welcome you when it pops up.  I was initially attracted to her name right away, because "Curly" is a nickname that we have always called my oldest daughter. But after poking around, it wasn't the name that kept me there, it was Heather's recipes!

Simply Gourmet Photography -  Here on Sherron's site, you will become instantly HUNGRY. I not only love her recipes and ideas that she shares, but she is just such a darn good photographer! I am envious of how she makes food look even better than it is!

The Devilish Dish - I was one of Candi's first followers to her blog.  I have been lucky enough to know Candi for many years now, Candi is always my "go to girl" when I have a kitchen question. I have had her cooking first hand, and it NEVER disappoints! She takes so much time in her posts, and always has something new and interesting to try.

Lovely Little Snippets - I always look forward to Stephanie's posts. Her site is just a little bit of everything. Recipes, scrapbooking, decorating, printables... you name it. It's a smorgasbord of ideas!

Chef in Disguise - Sawsan's blog is always filled with interesting recipes.  I love the eclectic variety that she presents.  She is another one that I envy when it comes to her ability to photograph food. I always look forward to her posts, and I just have to say, her "Lightening McQueen" cake on her facebook profile always make me smile!

So, there are my nominees for the Liebster award. I hope that you give them a visit, and begin enjoying their pages as much as I do.

And for those of you who have been chosen, I can't WAIT to see who you pick when you "pay it forward."

I am blessed to be surrounded by so many talented friends.  This was such a hard choice to make!

Fresh Apple Cake

Fall is here and that means so many of the recipes we see are full of spice and APPLES.

This fresh apple cake is no exception.

Not sure where the recipe originated, but my son came home from work one day and said that a lady he works with brought it in for lunch and he got the recipe so I could make it again!

I figured if my 16 year old took the time to get me a recipe, I would have to try it!

A "Real Housewives" Run In

Last night was interesting.

Hubby and I dropped our two youngest munchkins with my mother for the evening, and we decided to treat the older two munchkins to dinner.

Our schedule and our finances do not allow for many dinners out with the munchkins.

We decided to head down the street to the restaurant where I work.  We know everyone, the food is delish and it's pub style.

We can also play Keno.

After we finished our dinner and lost some money playing Keno, Hubby announces that the band just arrived.  We all looked out the window next to our cozy booth and saw a large "limo bus".  It was extremely large.

I work at this restaurant every weekend.  I see bands arrive.  I told Hubby this band must have some serious groupies.  And if they are good enough to travel in that bus, they are about to be quite disappointed with the turnout currently awaiting them.

We continued to watch as people exited the bus.  There was a camera man.  And a lady in very tight, shimmery cocktail dress.  She was tiny, and the dress was rather naked.

Since it was approximately fifty five degrees outside, she added a maroon "boa" to keep her warm.  I would have gone with a parka, but apparently the boa worked for her.

I couldn't help but watch her.  She was very familiar.  Confident.  She was half naked and it was freezing outside.  She had a gentleman with her who was short in stature.  He was wearing jeans and a button down dress shirt.

My munchkins were very interested in this scene in the parking lot.  They have never seen a band arrive anywhere.  Let alone a band arrive right outside the window of the restaurant they are dining in.

I was very interested in this scene because she was familiar.  And there was a camera.  And then I realized she looked like Teresa Giudice.  She looked EXACTLY like Teresa Giudice.  And the man looked like her husband.

My mommybrain is slow, and as I told Hubby that looked like the lady from Real Housewives, he mentioned that it MUST BE the lady from Real Housewives of New Jersey.

And it was.

Just as I was about to dash out the front door and ask for a picture, they loaded the bus.  Disappointment washed over us as we realized they were not coming in for dinner.  But it was rather exciting regardless.

The munchkins had quite an evening.  Dinner out, a little Keno and a celebrity siting right outside their booth window.

Never a dull moment in Mommyhood.

Porcupine Meatballs

This one was always a favorite when I was a kid.

Now... it's one of my kids' favorites.

(My "big kid" too!)

porcupine meatballs

Don't get "stuck" looking for something easy for dinner?! Try making porcupine meatballs!!

With the simple ingredients this recipe takes, you'll have dinner on the table in a jiffy!

I never really point out that when I make dinner it's for a family of six,
so remember my recipes are easily cut in half.

Porcupine Meatballs

2 lbs ground beef
2 cans tomato soup
2 eggs
1 1/4 c Minute rice, uncooked
2 t. Worcestershire Sauce
dry Parsley
Salt and Pepper
1 c Water

Combine beef with eggs, 1 t. of Worcestershire Sauce and rice.
Form into balls. (don't make them too big or they tend to fall apart easier)
Place in skillet, combine soup, 1 t. Worcestershire and water.  Pour over balls.  Sprinkle with dry parsley, and salt and pepper.  Simmer about 20 minutes, turning meatballs over from time to time, and stirring so they don't stick. When meatballs are no longer pink in center they are done.

I always serve these with a baked potato with sour cream.  Pairs perfectly!

I typically make these in the skillet, but I have baked them in the oven.
They bake about the same time as a meat loaf, depending on how much ground beef you are using.

Enjoy!!

Cake Batter Bars

For the record, I saw these on Pinterest.  I'm beginning to sound like a broken record.

However, I didn't keep to the recipe because I needed 28 bars.  I was bringing these to my son's football team, and they need cookie bars larger than rice grains.

My recipe turned out just perfect.  The end result was cake batter bar heaven and 28 bellies full of sugar.

Be careful not to overbake, because I strongly believe in soft, chewy centers.

Cake Batter Bars

2 1/2 cups vanilla cake mix (Funfetti works well)
1 1/2 cups flour
1 tsp baking soda
1 cup butter, very soft

1/2 cup sugar
1/4 cup brown sugar2 eggs
2 tsp vanilla
Sprinkles (if desired)

Heat oven to 350.

Grease 9x13 baking dish.  Blend butter and sugars on medium to high speed until creamy.  Add eggs and vanilla, mix well.  Add remaining ingredients, blending on low until just combined.  Stir in colorful sprinkles if desired.

Pour into prepared dish, bake 25-30 minutes.  Check bars at 25 minutes, if center is extremely "jiggly" continue baking.  Center should be a little gooey.

If you can resist, let bars cool before cutting and serving.
