Bak Kut Teh @ Crystal (Bak Cheng) off Jalan Lumba Kuda (Lion Hotel)

This old Bak Cheng bak kut teh was declared the King of Bak Kut Teh in Malaysia by (leading Malaysian Chinese language newspaper) Guangming Daily in 2006. The panel of judges was led by celebrity food critic Chua Lam 蔡澜.

This achievement by a modest shop tucked in a corner of Johor Bahru is no mean feat considering the innumerable bak kut teh shops throughout Malaysia.

Last year, Bak Cheng was renamed Crystal Bak Kut Teh when Bak Cheng the owner handed over the reins to his daughter Crystal and grandson.

Looking at the regular customers at the restaurant, the old man's skills must have been passed on well to the daughter who has been helping her father at the shop for more than 20 years.

The unpretentious restaurant is simply laid out, clean and cosy. The walls are adorned with the awards and accolades Bak Cheng and Crystal received from the media.

Crystal is known for its soup with a slight herbal flavour. The soup is light and it is not oily, nor peppery or salty. This set of bak kut teh and rice costs RM8.

The meat has just the right tender texture, firmness and is naturally sweet. The boiled fragrant long grain rice goes very well with the soup and meat. Eat these together with chopped garlic, chili and dark soy sauce for added spiciness. It is just a perfect match.

The meat and bones are stewed in large pots of herbal soup over slow charcoal fire.

Definitely one of my clear favourites.

Fried Oyster Omelette (Oh Chien) @ Meldrum Walk near City Square in Downtown Johor Bahru, Malaysia

Oyster Omelette at Meldrum Walk

This is a popular fried oyster omelette (oh chien in Hokkien) stall at Meldrum Walk near City Square Mall.

This oh chien here is pretty much like scrambled eggs with plump succulent oysters plonked on top. It’s done skilfully so the eggs and fat juicy oysters remain soft.

The natural eggy flavour and the subtle sea salty taste of fresh succulent oysters were retained.

This is not the kind of oh chien with hard tapioca starch batter that features a crispy crust.

Looking at the unending orders at this stall, this soft version has its following.

My 80 plus year old lady neighbour in Singapore loves this oh chien and have her son bring her to Meldrum Walk every week for this. Hmm.. maybe the softer kind is easier for her J

If you like soft oh chien, this is it.

Girl Friends "Spicy" Valentine Luncheon ~ 2012

I love to spoil my girlfriends.

They mean the world to me and every year around Valentine's Day I honor them with a party.

desserts & fruit

The last couple of years I have thrown a brunch.  If you want a peek at them you can find them here:

this year's invitation

I try to incorporate something that is a favorite of mine and build around it.

This year it was Mexican food and Conversation(hearts)

a little look-see at the table

I typically do linen napkins when I have a meal like this, but my inner 13 year old got the best of me when I saw the conversation heart napkins and little treat cups!!

The treat boxes were filled with chocolates, and of course, candy hearts!!

My Mom always got my brother and I a box of conversation hearts for Valentine's Day.

They have always been a favorite of mine.

I made this centerpiece for the table:

If you click HERE you can see how I did it!!

When I planned the menu I forgot that it was the first Friday of Lent.

So I mixed it up a little.

It worked out well.

The Menu::

Chips and Salsa, Guacamole and lots of toppings!

Jarritos and Iced Tea with Lemon

Fun was had by all....

But you will have to take my word for it, because I totally forgot to take pictures!!

OOPS!!

I was too busy eating!! ;)

White Chicken Enchiladas

These enchiladas are all over Pinterest.

At this point it's hard to tell who actually "made them first!"

white chicken enchiladas

I made them for the first time about a month ago, to "try them out" on my family before I made them for the luncheon with my friends.

My family LOVED them.

I did make a couple of changes to the recipe I found, but when don't I?

Here's what you do:

White Chicken Enchiladas
recipe adapted from Joyful Momma's Kitchen

8 burrito sized flour tortillas
2 cups shredded cooked chicken
2 cups chicken broth
3 T. butter
3 T flour
1 - 4oz can diced green chilies
8 ounces of sour cream
8 oz pkg Monterrey Jack cheese shredded
1 - 4oz can sliced black olives, drained

Preheat oven to 350 degrees.
Spray a 9x13 pan with non-stick cooking spray.
Evenly divide chicken and half of cheese to fill tortillas.  Roll enchilada style, place in prepared pan.

In a small saucepan melt butter, add flour to make a rue.
Add chicken stock and whisk until combined.  Cook until thick and bubbly.
Add green chilies and sour cream, remove from heat.

Pour over enchiladas.  Cover and bake for 20 minutes.
Uncover add remaining cheese and bake another 8-10 minutes until cheese is melted.

Top with olives, and serve.

Kluang Rail Coffee, Johor

Old Coffee Pots

This was my first time at the original Kluang Rail Coffee; after hearing so much and reading so many blog posts on it, my expectations were set pretty high. I ordered Kluang Rail Coffee's famous coffee, soft boiled eggs and roti keping (kaya and butter toast).

Kluang Rail's kopi C kosong and roti keping today were good but with nothing to set it apart from other coffee shops.

Kluang Rail's soft boiled eggs today were good too but about the same as those at most coffee shops.

Would I then, come back again to the old Kluang Rail Coffee? Strangely, even though Kluang Rail serves average coffee and food, I am sure that I will come back again.

I simply love this place.

Maybe it is its rustic, nostalgic ambiance. I like that quaint KLUANG RailCoffee signage.

Kluang Rail's unique wire cage enclosure, instead of walls, is also rather charming. It makes the place very cosy, breezy and airy. It is a nice comfortable place to chat while watching the train, the world go by with the corner of our eyes.

There is something about the spirit of the place.

The aroma of freshly brewed coffee and tea.

Maybe its plain people watching - look whose here, whose coming and whose going. Maybe this place calms people down, slows the heart rate, lowers our blood pressure. Or is it the colour scheme? Or is it about our identity? That it is one of those very few things from our growing up years that has remained pretty much the same and so we treasure it? Or are we afraid that this too will disappear, like so many precious links with our past. If you think of other possibilities, please share with me a comment. I would appreciate it very much

Walt Disney World on a Budget

This year, we knew if we did a family vacation to Walt Disney World, it would have to be "on the cheap."  There would be no plane tickets, no dining plan and no extravagant spending.

It's safe to say we survived our budget friendly trip, and enjoyed ourselves tremendously.

By skipping the meal plan, we saved our waistlines and our money.  I will always advise paying for the meal plan if you are planning a once in a lifetime, or even once every few years, vacation.  We however, try to go every year.

This gets mighty costly.

The meal plan is worth every penny when you consider the amount of food you receive for the money.  But my munchkins eat one plate of food, if I'm lucky.  We ate in Norway this time and they ate plates of salami with fresh fruit.  Off the appetizer buffet.

Norwegian meatballs, as delicious as they were, were met with disgust.

Since we had our car (due to our budget no-airfare vacation) we loaded our villa with groceries from Walmart.  I didn't go nutty; I bought chicken nuggets, apples, yogurt, bread, butter and the necessities for pancakes.

Everyone loves pancakes.

Every morning, Hubby or myself would pack a cooler with juice and snacks.  We did not buy drinks in the park, unless we were sitting down to lunch.  And even then, we didn't buy any munchkin drinks.

If we bought lunch, we split three meals between us all, which was plenty with the extras from the cooler.  And I was thrilled that my munchkins were eating yogurt and apples along with their counter service food.  Eating in the parks translates to eating convenience food.  Despite our best efforts to eat well, we all know when people get hungry they are not looking for the healthy alternatives counter.

It's whatever is fast and whatever is close.

At night, before heading out for more Disney fun, I whipped up nuggets.  Or pancakes.  Or sandwiches for the kiddos.  Later that night, out and about, we treated them to a small dessert while myself and Hubby ordered dinner in the parks.

Everyone's tummy was more than pleased with this arrangement.

The breakdown of our savings?

Five days of the meal plan for the Mommyhood Family: $740.00

Groceries and beer at Walmart (yes, Hubby stocked our vacation fridge with the necessities):  $83.00
Money spent on lunches (including one $90 lunch splurge at The Plaza) and dessert in parks:  $305.00

Disney on a budget savings?  $352.00

And we never felt deprived.  I promise.  Look at our happy faces.

I will conclude by saying that the meal plan is fabulous.  You eat like royalty and don't worry about taking out money every time someone small cries they are hungry.  Definitely splurge and experience the restaurants and character dining if you have the money saved.

But if you want to go to Disney, and you'll have a car, you can save mucho if you stock your fridge.  Mini fridges included.  You don't need a villa to save on drinks, sandwiches and snacks.

The munchkins don't care about peanut butter and jelly as long as they get their Mickey Ice Cream.

Along with the stock your room with food trick?  We did no park hopper ( I always advise against park hopper if you need to save) and we have our munchkins bring their OWN wallets.

Yes, we do make them buy their souvenirs.  I dive much more into this on my Disney Tips N Tricks page.  For this post, i will just say if your kids have their own money to spend, and they know in advance there are NO loaners from mom and dad, they will not beg for everything in every store.

Another option is to BUY SOUVENIRS BEFORE THE TRIP!  Keep your eyes open for Disney stuffed animals and clothes before you leave.  Leave a small surprise from Mickey every day and the kids won't be begging for goodies in the parks.

Lastly, to save up extra spending cash, we always start a large jar for loose change the minute our trip is planned.  We even toss in a few dollars here and there.  This really adds up!!!

Just a reminder we have a Disney timeshare, so hotel savings were not an issue for us.  For budget vacations, the value resorts are very reasonable in price.

Wishing you a very fun budget friendly trip!  Happy Trails!
